NUTTY CRISPY SUGAR COOKIES

Nutty Crispy Sugar Cookies image

I worked with a woman that baked 80 dozen or more cookies during the holidays. Every day she brought 1/2 dozen of every cookie she'd baked the night before; this is my favorite. I sometimes roll the dough into balls and then roll them in some granulated sugar rather than making these as drop cookies. These freeze well.

COOKIE NUT CRUST

Cookie Nut Crust image

This recipe came from "The Farmers Almanac Blue Ribbon Recipes" cookbook, used for a pumpkin pie. I used it last night to make Bev's Chocolate Chip Pie. It turned out great. It can be prebaked for a cream-filled pie, or unbaked for a pie that must go into the oven. You could use this recipe as an alternative to just about any "crumb crust". Hope you enjoy it as much as we do!

Number Of Ingredients 4

1 box of rolled pie crusts (2 crusts included with each box)
1/4 cup white sugar
1 Tablespoon cinnamon
3 Tablespoons melted butter

Steps:

  • Preheat oven to 325*F Working with one crust at a time, remove crust from fridge and wrapper. Roll out onto counter. Cut out shapes with your cookie cutter (or just cut into rectangles or tear into pieces) Place on cookie sheet. In a small bowl, mix sugar and cinnamon until well combined. Do not over bake! When first crust is used up completely (including scraps) complete the process with second crust.

Tips:

  • Use a food processor to quickly and easily combine the ingredients for the pie crust cookies. This will help to ensure that the dough is evenly mixed and that there are no dry pockets of flour.
  • If you don't have a food processor, you can use a pastry blender or two forks to combine the ingredients. Just be sure to work quickly and thoroughly so that the dough does not become too warm.
  • Use a cookie scoop to drop the dough onto the prepared baking sheet. This will help to ensure that the cookies are all the same size and shape.
  • Bake the cookies at a moderate temperature (350 degrees F) for 10-12 minutes, or until they are golden brown around the edges.
  • Transfer the cookies to a wire rack to cool completely before serving.
