NUTTY WILD RICE SALAD

Wild rice is sensational in this chilled salad. The toasted almonds complement the nuttiness of the rice, while red wine vinegar and soy sauce make a tangy dressing. I'll often serve the salad in lettuce cups, and sometimes I'll add diced ham and asparagus to turn it into a main-dish salad.

NUTTY WILD RICE SALAD

This recipe is from the Creme de Colorado Cookbook. It is a very easy salad to fix with an unusual flavor. I always have requests for the recipe when I take it to a potluck. The dressing and rice can be prepared ahead of time and combined with the final "fresh" ingredients added just before serving. It can be served in a bowl, or in individual "lettuce cups".

Tips:

  • Use fresh and ripe ingredients: This will ensure that your salad is flavorful and delicious. Look for kiwifruits that are firm and have a slight give when pressed. Red grapes should be plump and sweet.
  • Toast the wild rice: This will enhance its flavor and give it a slightly nutty taste. To toast the rice, spread it out on a baking sheet and bake in a preheated oven at 350 degrees Fahrenheit for 15-20 minutes, or until golden brown.
  • Use a variety of greens: This will add color and texture to your salad. Good options include baby spinach, arugula, romaine lettuce, and kale.
  • Don't overdress the salad: A little bit of dressing goes a long way. Start with a small amount and add more as needed.
  • Serve the salad immediately: This is when it will be at its best. If you need to make the salad ahead of time, store the dressing and the salad separately and combine them just before serving.

Conclusion:

This nutty wild rice salad with kiwifruit and red grapes is a delicious and healthy dish that is perfect for a summer meal. The combination of sweet and savory flavors, along with the crunchy texture of the wild rice and nuts, makes this salad a real winner. It is also a great way to use up leftover kiwifruits and grapes. So next time you are looking for a light and refreshing salad, give this recipe a try. You won't be disappointed!
