1 pound smoked kielbasa or Polish sausage, cut into 1/4-in. slices
2 teaspoons butter
2 cups leftover or refrigerated mashed potatoes
1 cup sauerkraut, rinsed and well drained
1 cup shredded cheddar cheese
1 teaspoon caraway seeds

Steps:

  • Unroll dough into a greased 15x10x1-in. baking pan; flatten dough and build up edges slightly. Bake at 425° for 8-10 minutes or until lightly golden brown. , Meanwhile, in a large skillet, saute kielbasa in butter until browned. Spread mashed potatoes over crust. 1 Pillsbury refrigerated classic pizza crust
12 ounces kielbasa
2 cups Simply Potatoes Traditional Mashed Potatoes
1 cup well drained sauerkraut
1 cup shredded muenster cheese

Steps:

  • Spread pizza dough on greased pizza pan and bake for half of recommended time at temperature designated on pizza dough container. Meanwhile, slice kielbasa into 1/4 inch slices. Heat a 10 inch saute pan over medium high heat. Saute kielbasa for 4 minutes or until heated through. Heat mashed potatoes for in microwave in a medium bowl for 2 minutes, stir, and heat 2 additional minutes. Take pizza dough out of oven and spread with mashed potatoes. Top with saurkraut that has been microwaved for 2 minutes. Place kielbasa slices over saurkraut. Sprinkle with cheese. Place back in oven for the rest of the recommended baking time or until cheese is melted and beginning to turn golden.

This recipe combines all of the great elements of traditional Oktoberfest dishes into one loaded pizza! I added the spicy brown mustard to the original recipe for some extra kick and we also wound up topping the pizza with Thousand Island dressing. Also, the original recipe called to prebake the crust for 8-10 minutes before adding the toppings but I would suggest baking for no longer than 5 minutes. Mine got a little too crispy after the second round of baking when I prebaked it for the full time. (October/November issue of Taste of Home)

2 cans (10-1/2 ounces each) condensed cheddar cheese soup, undiluted
1 cup beer or chicken broth
1 cup sour cream
1 package (32 ounces) frozen cubed hash brown potatoes, thawed

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
1 (1 lb) package beer bratwurst (uncooked)
1 (14 ounce) can sauerkraut, drained
1/4 cup honey dijon mustard
2 cups swiss cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Coat 13 x 9 inch baking dish with cooking spray.
  • Cook Simply Potatoes according to package directions. Set aside.
