OKRA SALAD WITH TOASTED CUMIN

Okra Salad With Toasted Cumin image

Even avowed okra-phobes love this salad, which is seasoned with a warm and earthy Moroccan spice blend. The okra cooks for only 2 minutes in salted water, and the resulting flavor and texture are somewhat reminiscent of asparagus. The salad tastes best at room temperature.

Categories     Low Protein

Time 8m

Yield 6 serving(s)

Number Of Ingredients 9

1/2 cup vegetable oil
3 tablespoons white vinegar or 3 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon hot sauce
1 lb small okra pods
1 small onion, thinly sliced and separatedinot rings
1 clove garlic, minced
tomatoes, slices (optional)

Steps:

  • Combine the first 5 ingredients, and stir well.
  • Blanch okra in boiling water 3 minutes.
  • Drain.
  • Combine warm okra, onion, and garlic in a 12x8x2-inch dish.
  • Pour vinaigrette over okra mixture; toss gently to coat.
  • Marinate at least 2 hours; drain.
  • Arrange on serving plate with tomato slices; if desired.

Tips:

  • Choose fresh, tender okra: Look for okra pods that are small, firm, and have a deep green color. Avoid okra that is bruised or has blemishes.
  • Toast the cumin seeds before using: Toasting the cumin seeds will bring out their flavor and aroma. You can toast them in a dry skillet over medium heat for a few minutes, or in the oven at 350 degrees Fahrenheit for 5-10 minutes.
  • Use a light hand with the vinegar: Vinegar can be overpowering, so use it sparingly. You can always add more vinegar to taste, but it's difficult to remove it once it's been added.
  • Let the salad marinate for at least 30 minutes: This will allow the flavors to meld and develop. You can marinate the salad for up to overnight.
  • Serve the salad chilled: Okra salad is best served chilled. You can chill it in the refrigerator for at least 30 minutes before serving.

Conclusion:

Okra salad is a delicious and refreshing side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. With its bright flavors and crunchy texture, okra salad is a surefire hit.
