This one has been in our family for as long as I can remember. A long time ago my grandma used to use fresh corn, but as the family got BIG and there were a lot of mouths to feed (more to make too) she went to can corn just to make it faster. I cut the recipe in half.

Tips:

  • Use fresh corn kernels: Fresh corn kernels give the fritters a sweeter, more vibrant flavor than frozen or canned corn. If you don't have fresh corn, you can use frozen or canned corn, but be sure to drain it well before adding it to the batter.
  • Don't overmix the batter: Overmixing the batter will make the fritters tough. Mix the batter just until the ingredients are combined.
  • Use a hot skillet: A hot skillet will help the fritters cook evenly and prevent them from sticking. If the skillet is not hot enough, the fritters will absorb too much oil and become greasy.
  • Don't overcrowd the skillet: Don't overcrowd the skillet with fritters, or they won't cook evenly. Cook the fritters in batches, if necessary.
  • Serve the fritters hot: Corn fritters are best served hot out of the skillet. You can serve them with butter, honey, syrup, or your favorite dipping sauce.

Conclusion:

Corn fritters are a delicious and easy-to-make side dish or snack. They're perfect for using up leftover corn, and they're also a great way to get your kids to eat more vegetables. With a few simple tips, you can make perfect corn fritters every time.
