Quick, simple supper. My 3 year old ate 6 servings, so I guess its kid friendly too. :) I used a very lean beef that didn't require draining, if you use a fatty meat you may want to drain it before step 3. If you don't want to use minute rice, you can double the water, use regular rice, and let it simmer about 7 minutes longer.

1 lb ground round
1 onion
1 lb frozen peas and carrot
2 cups Minute Rice
2 1/2-3 cups water

Steps:

  • Dice onion (I like large chunks, you may prefer it smaller.)
  • In a medium sized pot, brown ground beef, with onion. (Add a clove or two of garlic if desired.).
  • When the beef is done, add the peas and carrots, and 2 1/2 cups of water. Let it reach a boil, and turn heat to medium.
  • After about 5 minutes, add the minute rice, and an additional 1/2 cup of water if needed. Simmer for 5 minutes or so, until the rice and vegetables are tender.
  • Season with salt and pepper to taste just before serving.

1 lb ground beef
1-2 clove garlic, minced
1 large onion, chopped
2 medium potatoes, washed but not peeled, then sliced
1 c uncooked rice
1 c diced celery
2 c kidney beans, drained
2 c stewed tomatoes, drained
1 c juice drained from tomatoes
salt and pepper to taste

Steps:

  • 1. Lightly brown beef in skillet with garlic, drain, and add salt, pepper and some Worchestershire sauce to it. Beef should still be rare as it will continue to cook in the oven.
  • 2. In a large casserole dish layer onion, then potatoes. Sprinkle some salt and pepper on potato layer. Add ground beef. Make the next layer rice, then celery, then kidney beans, tomatoes, and finally tomato juice. Add some more salt and pepper if desired. Bake at 350 degrees for 2 hours.

Cups of beef broth need to=cups of rice thats all you need to remember. This is a fun recipe to play around with. For an Italian flavour substitute Italian seasoning for the spicy pepper medley etc.

1 lb lean ground beef or 1 lb ground chicken
1 (40 g) package onion soup mix
1 tablespoon Clubhouse spicy pepper medley
1 teaspoon garlic powder
1 (28 ounce) can diced tomatoes
1 medium green pepper, diced (optional)
3 cups beef broth
3 cups instant rice (Minute Rice or Uncle Ben's)
1/2 cup vegetable juice or 1/2 cup tomato juice

Steps:

  • In a Dutch oven: brown ground beef with garlic powder and green pepper until beef and pepper are cooked through; drain off excess fat.
  • Add onion soup mix, pepper medley, can tomatoes, beef broth and vegetable juice; mix well.
  • Bring contents to a boil and simmer for 5-10 minutes until onions in soup mix are soft; add rice. Cover pot and remove from heat. Let stand for 6-7 minutes or until rice is cooked through.

1 cup chopped onion
1 cup chopped celery
1 cup chopped green pepper
2 cloves garlic, minced
2 1/2 cups low-fat chicken broth
1 (19 ounce) can tomatoes, undrained,cut up
1 tablespoon tomato paste
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon ground thyme
1 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes (or more, to taste)
1 1/4 cups uncooked long grain white rice
1/4 cup chopped fresh parsley (or 1 T. dried)
3/4 lb bay scallop

Steps:

  • In a large saucepan, combine onions, celery, green pepper, garlic, and 1/4 cup of the chicken broth.
  • Saute vegetables over medium-high heat for about 5 minutes, until softened.
  • Add remaining chicken broth, tomatoes, tomato paste and seasonings.
  • Bring to a boil.
  • Add rice.
  • Reduce heat to low.
  • Cover.
  • Simmer, stirring occasionally, for 20 minutes, or until rice is almost tender.
  • Add parsley and scallops.
  • Cover and cook for 5-6 minutes, until scallops are tender and opaque.
  • Stir well and serve.

1 1/2 lbs baking potatoes, peeled,cut into large chunks (you will be grating them after cooking)
12 ounces turnips, peeled cut into chunks

4 teaspoons vegetable oil
1 cup cheddar cheese, mild,mediun or old,shredded
6 ounces cooked turkey, coarsely chopped

Steps:

  • Boil the Potatoes& turnips for apprx 10 minutes, the potatoes should be cooked but still firm, drain and allow to cool.
  • Coarsely grate the potatoes& turnips into a bowl Add Parsley, salt& Pepper, toss to mix well Heat half the oil in a 9" skillet and swirl it around so it coats the whole pan Pat half the potatoe/turnip mixture evenly into the bottom of the pan, top with half the cheese, then all the turkey, followed by the remaining half of the cheese, pat the remaining potato mixture on top Cook for apprx 10 minutes uncovered over medium heat or until the bottom is golden and crispy Using a spatula& shaking the pan gently loosen the Rosti Invert a flat plate onto the pan, using oven mitts, firmly holding the plate and pan together invert the rosti onto the plate, Heat the remaining oil in the pan then slip the rosti back into the pan unbrowned side down and cook for another ten minutes, uncovered or until golden Cut in wedges and serve.
