Time 1h

Yield 4 serving(s)

Number Of Ingredients 7

1 tablespoon oil
4 small boneless skinless chicken breast halves (about 1 lb.)
3/4 teaspoon garlic powder, divided
3/4 teaspoon dried rosemary leaves, crushed, divided
1 (10 3/4 ounce) can reduced-sodium chicken broth
1/3 cup water
1 cup Minute brown rice, uncooked

Steps:

  • Heat oil in large nonstick skillet on medium-high heat.
  • Add chicken; sprinkle with 1/4 tsp.
  • each of the garlic powder and rosemary.
  • Cover.
  • Cook 4 minutes on each side or until chicken is cooked through.
  • Remove chicken from skillet.
  • Add broth and water to skillet; stir.
  • Bring to boil.
  • Stir in rice and remaining garlic powder and rosemary.
  • Top with chicken; cover.
  • Cook on low heat 5 minutes.
  • Remove from heat.
  • Let stand 5 minutes.

Tips:

  • Use bone-in, skinless chicken thighs: The bones add flavor, and the skin keeps the chicken moist. If you don't have bone-in chicken thighs, you can use boneless, skinless chicken breasts. Just be sure to cook them for a shorter amount of time so they don't dry out.
  • Sear the chicken before baking it: Searing the chicken gives it a delicious golden brown crust and helps to lock in the juices. To sear the chicken, heat a little oil in a skillet over medium-high heat. Add the chicken thighs and cook for 3-4 minutes per side, or until they are browned. Then, transfer the chicken to a baking dish.
  • Use long-grain rice: Long-grain rice is less likely to stick together and will give you a fluffy, light rice dish. If you don't have long-grain rice, you can use medium-grain rice, but it may be a little stickier.
  • Add some vegetables to the rice: Vegetables will add flavor and nutrition to your rice dish. Some good options include carrots, celery, onions, and bell peppers. You can also add some frozen peas or corn.
  • Season the rice and chicken well: Don't be afraid to use plenty of salt, pepper, and other seasonings to flavor the rice and chicken. Some good options include garlic powder, onion powder, paprika, and cumin.
  • Bake the chicken and rice until the chicken is cooked through and the rice is tender: The chicken should be cooked to an internal temperature of 165 degrees Fahrenheit. The rice is tender when it has absorbed all of the liquid and the grains are cooked through.

Conclusion:

This one-dish rosemary chicken and rice dinner is an easy and delicious meal that's perfect for busy weeknights. It's also a great way to use up leftover chicken. The chicken is flavorful and moist, and the rice is fluffy and seasoned to perfection. Plus, the whole meal can be made in one dish, which makes cleanup a breeze.
