GRILLED TOMATO AND CHEESE

Butter does more for a grilled cheese than just browning the bread. Using cultured butter, one made with fermented cream, can add depth and a touch of sweet and tangy richness, thereby elevating the sandwich to new heights.

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 5

1 large or 2 medium heirloom or beefsteak tomatoes
Kosher salt
Eight 1/3- to 1/2-inch-thick slices Pullman bread
12 slices sharp Cheddar or American cheese
6 tablespoons cultured butter, softened

Steps:

  • Thinly slice the tomatoes and lay them on a paper towel. Sprinkle with salt and let sit to release any water, about 15 minutes. Pat dry.
  • Lay out 4 slices of the bread on a work surface. Layer each with 2 slices of cheese, making sure that they cover to the edges. Follow with 2 slices of tomato and then 1 more slice of cheese. Close the sandwiches with the remaining bread. Thinly and evenly spread the butter on both sides of the bread using about 1 1/2 tablespoons of the butter for each sandwich.
  • Place 2 sandwiches into a nonstick medium skillet over medium heat. Cover the skillet with a lid and cook until the bread is evenly golden brown, about 2 minutes. Flip, cover again and cook until the bread is golden brown and the cheese is visibly melted, about 2 minutes more. Repeat with the remaining sandwiches.

GRILLED CHEESE WITH PEAK TOMATOES

Grilled Cheese With Peak Tomatoes image

Progression of a tomato sandwich: On buttered bread with salt; on bread with mayo and cheddar; seasoned and grilled with cheddar and mayo. They're all pretty perfect, but we'll take the advanced version, thanks.

Yield Serves 4

Number Of Ingredients 6

2 large beefsteak or other tomatoes
Kosher salt, freshly ground pepper
8 slices sourdough bread or other country-style loaf
1/4 cup mayonnaise
1 pound sharp white cheddar, coarsely grated
1 small shallot, very thinly sliced

Steps:

  • Slice tomatoes as thin as possible (a serrated knife works great) and place on a wire rack set inside a rimmed baking sheet; season with salt and pepper. Let sit, turning once, until they have released some of their liquid, 20-30 minutes.
  • Heat 2 dry large skillets over low (or use 1 skillet and work in 2 batches). Spread 1 side of 4 slices with half of mayonnaise. Set slices, mayo side down, on a cutting board. Mound cheese on slices, pressing down gently to pack onto bread. Top with shallot and close sandwiches. Cook, mayo side down, pressing gently, until bottom sides are golden brown (you should barely hear any sound of sizzling as the bread hits the skillet; low and slow is key), 6-8 minutes. Spread remaining mayonnaise over top slices of bread and carefully turn sandwiches over. Cook until other side is golden brown and cheese is melted, 6-8 minutes. Transfer to a cutting board and carefully pry each sandwich open. Add a thin layer of tomatoes and close back up; slice in half.

Tips:

  • Use a sturdy bread that can hold up to the fillings and the grilling process. A sourdough or French bread would be a good choice.
  • Spread the butter or mayonnaise all the way to the edges of the bread. This will help the sandwich brown evenly and prevent the bread from getting soggy.
  • Use a good quality cheese that melts well. Cheddar, mozzarella, and Gruyère are all good choices.
  • Don't be afraid to experiment with different fillings. You could add sliced ham, bacon, or avocado to your grilled cheese sandwich.
  • If you're using a panini press, preheat it according to the manufacturer's instructions. If you're grilling the sandwich in a skillet, heat the skillet over medium heat.
  • Cook the sandwich until the cheese is melted and bubbly and the bread is golden brown.

Conclusion:

Open-faced tomato and cheddar grilled cheese sandwiches are a quick and easy meal that can be enjoyed for breakfast, lunch, or dinner. They're also a great way to use up leftover bread and cheese. With a few simple ingredients and a little bit of time, you can make a delicious and satisfying meal that the whole family will love.
