8 oz cream cheese, softened
5 Tbsp butter or margarine, softened
1/3 c sugar
2 eggs & 3 more eggs for the brownies
2 Tbsp flour
3/4 tsp vanilla extract
1 family-size brownie mix, using 13 x 9
oil, eggs, water, as directed on brownie mix
1 container milk chocolate frosting, optional

Steps:

  • 1. In a medium bowl, put out the cream cheese & butter to soften for about 15 minutes or so. After that-
  • 2. Preheat oven to 350 degrees F. Grease (or spray) bottom only of 13 x 9" pan.
  • 3. Beat together the cream cheese & butter. Add the sugar, eggs, flour, and vanilla. Beat until smooth, then set aside.
  • 4. Prepare the brownie mix as directed, using the extra egg to make "cake-like brownies." (This usually calls for 3 eggs total.)
  • 5. Spread half of the brownie batter into the prepared pan. Pour all of the cream cheese mixture over the brownie batter. Spoon the remaining brownie batter in spots over the top. Gently swirl the two mixtures together with a knife.
  • 6. Bake at 350 degrees F. for 30-40 minutes, checking with a toothpick for doneness. Check at 30 minutes first, then add time, if needed.
  • 7. Remove from oven & cool completely. Frost with milk chocolate frosting, if desired.

1 large egg

3/4 stick (6 tablespoons) unsalted butter, cut into pieces
2 ounces unsweetened chocolate, chopped
2 ounces fine-quality bittersweet chocolate (not unsweetened), chopped
1 cup sugar
1 teaspoon vanilla
2 large eggs
2/3 cup all-purpose flour
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F. and butter and flour a 9-inch square baking pan, knocking out excess flour.
  • Make cheesecake batter:
  • In a bowl stir together cream cheese, sugar, and zest with a wooden spoon until smooth. Beat in egg with a fork until blended and stir in flour.
  • Make chocolate batter:
  • In a heavy 1 1/2-quart saucepan melt butter and chocolate over low heat, stirring, until smooth and remove pan from heat. Cool mixture 10 minutes and stir in sugar and vanilla. Add eggs, 1 at a time, beating well with a wooden spoon until mixture is glossy and smooth. Stir in flour and salt until just combined.
  • Spread chocolate batter evenly in pan. Drop cheesecake batter by large spoonfuls onto chocolate batter and run a knife through batters to make decorative swirls. Bake brownies in middle of oven 50 minutes, or until cheesecake mixture is pale golden and a tester comes out clean. Cool brownies completely in pan on a rack before cutting into 16 squares. Brownies keep, layered between sheets of wax paper in an airtight container and chilled, 5 days. Brownies may be eaten chilled or at room temperature.

15 digestive biscuits
6 tbsp butter, melted
400g curd or cream cheese
grated zest 3 oranges, save the segments for the decoration
200g mascarpone cheese
100g caster sugar
3 tbsp milk
184ml pot double cream

Steps:

  • Crush the biscuits roughly. You can do this by putting them in a plastic food bag and crushing them with a wooden spoon.
  • Put the biscuits into a bowl and mix in the melted butter. Put the mixture into a 23cm cheesecake tin, then use the back of a spoon to spread it evenly and press it down in the tin to form the base. Put the tin into the fridge to set. This should take about 30 mins.
  • Put the curd or cream cheese, orange zest, mascarpone, sugar and milk into a bowl and mix it well with the wooden spoon.
  • Put the cream in a clean bowl and whisk until it is the consistency of thick custard. Add to the orange mixture and mix thoroughly.
  • Remove the cheesecake tin from the fridge. Pour the filling over the biscuit base and spread evenly. Decorate with segments of orange and return to the fridge until ready to serve (at least 4 hours or overnight).
