2 cups hot water

8 ounces Cool Whip
3/4 cup grated cheddar cheese

Steps:

  • Drain pineapple and save the juice for topping.

3/4 cup orange juice
1/3 cup sugar

1 teaspoon grated orange zest
1/8 teaspoon orange extract, optional
1 can (15 ounces) mandarin oranges, drained
2 tablespoons reduced-sugar orange marmalade

Steps:

  • In a bowl, combine wafer crumbs and butter; press onto the bottom of an ungreased 9-in. springform pan. Bake at 375° for 10 minutes. Cool on a wire rack. In a saucepan, combine orange juice, sugar and gelatin; let stand for 5 minutes. Cook and stir over low heat until gelatin is dissolved. Cool for 10 minutes., Meanwhile, in a blender or food processor, cover and process ricotta cheese until smooth. 2 teaspoons baking powder
¼ teaspoon baking soda
¾ teaspoon salt
2 teaspoons orange zest
⅔ cup shortening
⅓ cup orange juice
⅓ cup water
2 eggs
2 tablespoons lemon juice
2 egg whites
1 ½ cups white sugar
5 tablespoons water
⅛ teaspoon salt
1 ½ teaspoons light corn syrup
⅛ teaspoon cream of tartar
1 teaspoon vanilla extract
2 tablespoons grated orange zest
½ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease and flour two 8 inch cake pans.
  • Sift together into a large bowl the cake flour, 1 1/3 cups sugar, baking powder, baking soda, and 3/4 teaspoons salt. Add grated orange rind, shortening, orange juice, and 1/3 cup water. Beat on medium speed for 2 minutes with an electric mixer, scraping bowl while beating. Add two whole eggs and beat batter for 2 more minutes. Beat in the lemon juice. Pour batter into prepared pans.
  • Bake at 375 degrees F (190 degrees C) for 30 to 40 minutes. Remove cakes from pans and let cool. Frost with Double Boiler Icing or whipped cream. Sprinkle cake with grated orange rind and finely chopped nuts or coconut.
  • To Make Double Boiler Icing: In the top of a double boiler put; the 2 egg whites, 1 1/2 cups of the sugar, 5 tablespoons water, 1/8 teaspoon salt, light corn syrup, and cream of tartar. Place over boiling water and beat until blended. Cook mixture beating constantly until mixture will stand in peaks. Remove from heat and add the vanilla. Continue beating until of spreading consistency, about 5 minutes. Spread onto cooled cake.

1 ⅛ cups all-purpose flour
⅓ cup whole wheat flour
1 ½ teaspoons ground ginger
½ teaspoon ground cinnamon

5 tablespoons fruit-based fat substitute
⅓ cup honey
⅓ cup granular sucrolose sweetener (such as Splenda®)
1 teaspoon vanilla extract
⅓ cup orange zest
½ cup chopped crystallized ginger
⅓ cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • Place half of the oats, and half of the triticale into a blender or food processor, and grind into a fine powder. Transfer to a medium bowl, and combine with the remaining oats, triticale, all-purpose flour, whole wheat flour, ginger, cinnamon, baking soda and salt. Set aside.
  • In a large bowl, mix together the fat substitute, honey, and sucrolose sweetener until smooth. Mix in the vanilla and orange zest. Add the dry ingredients, and mix until well blended. Finally, stir in the chopped candied ginger and cranberries. Drop by heaping teaspoonfuls onto the prepared baking sheets. Cookies should be spaced at least 2 inches apart.
  • Bake for 11 to 13 minutes in the preheated oven, or until the edges are golden. Cool on baking sheets for at least 5 minutes before removing to wire racks to cool completely.

2 pkg 3 oz. ea. orange jello
11 oz can drained, mandarin oranges
4 oz pkg. cream cheese, softened
3 Tbsp granulated sugar
8 oz tub thawed cool whip
chopped walnuts, optional

Steps:

  • 1. Stir boiling water into jello in a medium bowl stirring until completely dissolved. Stir in cold water. Chill about 1 1/2 hours or until slightly thickened(so it looks like raw egg whites)
  • 2. Reserve a few orange segments for garnish, and gently stir in remaining ones into the jello; set aside.
  • 3. Beat cream cheese and sugar in a large bowl with electric mixer on medium speed until well blended. Gently stir in by hand the topping. Spoon jello into glass cake pan or bowl. But I like orange-pineapple even more than strawberries, so this recipe, found in a Jell-O cookbook, is a newfound treasure! Serve as a sweet salad, or a dessert. Perfect for a potluck or bbq.

1 (20 ounce) can crushed pineapple, undrained
cold orange juice, as needed
1 1/2 cups boiling water
1 (6 ounce) package orange gelatin (or 2 3oz pkgs)
1 (8 ounce) package cream cheese, softened

Steps:

  • Drain pineapple well, reserving juice.
  • Place pineapple juice in a 2-cup measuring cup and add enough cold orange juice to make 1 1/2 cups liquid.
  • Place orange jello in a large bowl and add boiling water; stir at least 2 minutes or until jello is completely dissolved.
  • Stir pineapple/orange juice into jello.
  • Reserve one cup of the jello mixture; leave this at room temperature.
  • Stir half of the crushed pineapple into jello mixture in bowl; pour into a 6 cup mold that you've sprayed with nonstick cooking spray (like Pam).
  • Refrigerate mold about two hours, or until set but not firm-- mixture should stick to your finger when touched, and should mound.
  • Place cream cheese into mixing bowl and stir in reserved gelatin (what you've been keeping at room temp); whisk well until smooth.
  • Stir in remaining crushed pineapple; spoon this mixture over gelatin layer in mold.
  • Refrigerate for 4 hours or until firm; unmold and serve.

1 (21 ounce) can peach pie filling
2 eggs
8 ounces cream cheese, softened
1/2 cup sour cream
1 box vanilla instant pudding mix, dry
1 (20 ounce) can crushed pineapple in juice
8 ounces Cool Whip

Steps:

  • Beat the cake mix with the pie filling, eggs, and sour cream using a fork.
  • Beat one minute.

My mom received the recipe from a co-worker probably 40+ years ago. Even after a heavy meal, this is a really refreshing dessert. I hope you enjoy it as much as we do!

1 large orange jello-o (or 2 small boxes)
2 c boiling water
6 oz frozen orange juice concentrate
8 oz crushed pineapple (can be packed in juice or water - do not drain)
2 can(s) mandarin oranges (11 oz ea) - drain
1 small vanilla or french vanilla instant pudding (we have always preferred french vanilla)
8 or 9 oz cool whip
1 c cold milk

Steps:

  • 1. For jello mixture: Bring water to a boil, add Jell-O, stirring until clear. Remove from heat. Add frozen orange juice concentrate and stir until melted. Stir in mandarin oranges and pineapple. Pour into an 11 x 7 dish and refrigerate overnight or until the jello mixture has completely set.
  • 2. For Topping: Mix pudding with milk until it starts to set up. Be sure to use only 1 cup of milk, as listed in the ingredients. You don't want to make actual pudding. Fold in Cool Whip and spread over top of jello mixture.
  • 3. Optional: Put mandarin orange slices on top for color. Add crushed pecans for added texture, color, etc.

1 medium granny smith apple, cut into 1-inch chunks

2 cups all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup softened unsalted butter
3/4 cup sugar
1 egg
2 tablespoons orange zest
1/2 cup orange juice
ORANGE FROSTING:
2 1/2 tablespoons softened unsalted butter
1 1/2 cups confectioners' sugar
2 tablespoons orange zest
1 1/2 to 2 tablespoons orange juice (I used closer to 2 1/2 tablespoons)

Steps:

  • Preheat oven to 400°F. Sift flour, baking powder, baking soda, and slat into a medium bowl and set aside. In a stand mixer, cream butter and sugar on medium speed for several minutes until light and fluffy. Add the egg and orange zest and mix until combined. Add flour mixture and orange juice in three additions, alternation between the flour mixture and the juice. Drop tablespoons of dough onto an ungreased cookie sheet at least 1 1/2 inches apart. Bake for 8 to 10 minutes. Remove and allow to cool on wire racks for at least 30 minutes before frosting. FROSTING: In a stand miner, cream butter and sugar at medium speed for several minutes until light and fluffy. Add orange zest and juice, and mix until smooth. Frost cooled cookies using a mini rubber spatula.

Years ago, a co-worker of mine made this cake for one of our potlucks and it was pretty tasty. The recipe is simple and quick.

1 box orange cake mix
1 can(s) (21 oz) peach pie filling*
2 large eggs
1/2 c sour cream
1 pkg (8 oz) cream cheese, softened
1 box (small) instant vanilla pudding mix
1 can(s) (20 oz) crushed pineapple, undrained
1 (8 oz) container cool whip whipped topping**

Steps:

  • 1. Preheat the oven to 350°F. Ignore the directions on the cake mix box and mix as follows: With a fork or large spoon, beat the cake mix, pie filling*, eggs and sour cream together for about 1 minute (Make sure it is well blended). Pour the mixture into an ungreased, parchment paper lined 10x16 inch jelly roll pan. Bake for 25 to 35 minutes. Let cool, in the pan, on a wire rack.
  • 2. In a large bowl, whip together the cream cheese, pudding mix and pineapple. Fold in the whipped topping, blend well. Spread the cream cheese mixture on the cooled cake and refrigerate until ready to serve. Store any leftovers in the refrigerator.
  • 3. * I like to chop up the peaches that are in the pie filling so there are more pieces throughout the cake instead of just large chunks here and there. ** I also like to use REAL whipped cream, as I'm not a huge fan of frozen whipped toppings, but the original recipe used Cool Whip (and mixed with the other ingredients, it tastes just fine).
