3 tablespoons nonfat milk powder

1/2 cup safflower oil
1 teaspoon pure vanilla extract

  • In a separate medium bowl, whisk eggs, yogurt, oil, and vanilla until smooth. Add to dry ingredients and whisk until thoroughly combined. Stir in nigella seeds just until incorporated.
  • Divide batter evenly among molds. Bake until firm, puffed, and golden brown around the edges, about 15 minutes. Transfer pan to a rimmed baking sheet fitted with a wire rack. Spoon 2 tablespoons reserved syrup over each cake; let stand for 15 minutes.

Tips:

  • For a richer flavor, use full-fat yogurt and butter.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it stand for 5 minutes before using.
  • Grate the orange zest finely to get the most flavor. You can also use a citrus zester.
  • Be sure to cream the butter and sugar together until light and fluffy. This will help the cakes to rise properly.
  • Don't overmix the batter. Overmixing can make the cakes tough.
  • Bake the cakes until a toothpick inserted into the center comes out clean. Overbaking will make the cakes dry.
  • Let the cakes cool completely before frosting them. This will help the frosting to set properly.

Conclusion:

These orange-ginger yogurt cakes are a delicious and easy-to-make treat that is perfect for any occasion. The cakes are moist and flavorful, with a hint of orange and ginger.
