I found this recipe years ago in a magazine. It is delicious and one of my favorite ways to serve sweet potatoes at Thanksgiving.

3 lbs sweet potatoes, peeled and cubed
2 eggs
1/4 cup packed light brown sugar
1/4 cup melted butter
1 teaspoon salt
1 teaspoon cinnamon
1/4-1/2 cup orange juice
1 cup pecan halves
1/2 cup packed light brown sugar
1/4 cup melted butter

Steps:

  • In a large saucepan cook the cubed sweet potatoes or yams in boiling water until very tender. Drain.
  • Put the sweet potatoes into a large mixing bowl and beat with an electric beater until smooth.
  • Add the eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon and beat until everything is well blended.
  • Add 1/4 cup of the orange juice and beat again. If the mixture is not moist and fluffy, add up to 1/4 cup more orange juice.
  • Lightly butter a souffle or casserole dish and add the beaten sweet potato mixture.
  • Arrange the pecan halves on top.
  • Sprinkle the 1/2 cup brown sugar and the remaining 1/4 cup melted butter on top.
  • Bake 375 degrees for about 30 minutes or until hot.

2 1/2 pounds sweet potatoes, peeled and cut into small chunks or thin slices
Salt
1 tablespoon oil, extra-virgin olive oil or vegetable oil
2 slices smoky bacon, finely chopped
1 orange, zested and juiced
Chicken stock, as needed
1 teaspoon coriander, 1/3 palmful
1/2 teaspoon ground cumin, 1/3 palmful
1/4 teaspoon ground cinnamon
A few dashes hot sauce, to taste

Steps:

  • Put the potatoes in a medium pot, cover with water, salt the water and bring to boil over medium heat. Cook until tender, then drain and return the potatoes to the pot. Heat a little oil over medium heat, in a medium saute pan and add the bacon and cook until it begins to crisp. Stir in the orange zest and juice and the potatoes. Mash to desired consistency with some chicken stock to thin the potatoes, if desired. Stir in the coriander, cumin, cinnamon and hot sauce. Transfer to a serving bowl and serve.

This recipe is from Cook's Illustrated and I made them today and it is fabulous! I omitted the pepper but stuck by the rest of the recipe. "Cutting the sweet potatoes into slices of even thickness is important in getting them to cook at the same rate. A potato masher will yield slightly lumpy sweet potatoes; a food mill will make a perfectly smooth puree. The potatoes are best served immediately, but they can be covered tightly with plastic wrap and kept relatively hot for 30 minutes. This recipe can be doubled in a Dutch oven; the cooking time will need to be doubled as well."

5 medium potatoes, peeled and cut into medium chunks
1/2 medium onion, finely chopped
16 ounces sausage or 16 ounces kielbasa
2 teaspoons salt
1/8 teaspoon pepper (optional)
4 tablespoons butter (optional)
4 tablespoons hot cream (optional)

Steps:

  • Place the carrots in the bottom of a 3 quart pan with about 2 cups of water and put on high to boil.
  • Let cook for about 3-5 minutes.
  • Add the potatoes and onion.
  • Put the sausage on top. (It will give the veggies some great flavor!).
  • Cover. Let cook over medium heat for about 10 min until the vegetables are tender and easy to mash.
  • Remove the sausage to a plate to keep warm.
  • Drain the vegetables, reserving at least 1/2 c of the water if you prefer to use water to cream or milk.
  • Put through a potato ricer or use a potato masher to mash all the vegetables together. Use the back of a spoon to smoosh it all together with the remaining ingredients. You CAN use a mixer for this, but you risk the vegetables becoming gummy if you over-mix. Go for power at your own risk!
  • Season to taste. Serve with a salad and dinner is ready!

3 tablespoons soy sauce

Salt and black pepper
2 tablespoons cilantro

Steps:

  • 1. Place the chicken in a large bowl. Combine remaining ingredients and coat chicken. Refrigerate, covered, for 2 to 4 hours.
  • 2. Remove chicken 30 minutes before cooking. Preheat oven to 375°F. Arrange chicken in a shallow roasting pan. Pour 2/3 cup of the marinade into the pan.
  • 3. Bake chicken, basting frequently, for 1 hour.
