ORANGE PORK CHOPS

Orange Pork Chops image

I'm constantly on the lookout for ways to "spice up" a standard dish. When I fixed these pork chops for the first time, my husband-who has a hearty appetite for down-home cooking-commented, "You can make this anytime!" We have a 5-month-old son, and he's already showing signs he'll take after his dad in the eating department. Our daughters, 6 and 8 , help me with the cooking. So it's a good thing that I have a large recipe collection!

Salt to taste if desired
Freshly ground pepper to taste
3 tablespoons oil (corn, peanut or vegetable)
1/3 cup finely chopped onion
1/4 cup dry white wine

Lemon-Tarragon Grilled Pork Chops image

I found this recipe in the Cooking Light Summer issue. It was wonderful. My DH, who isn't a big pork eater, even like them. Hope you enjoy. I just had to share with my recipezaar family. Preparation time includes marinating.

Tips:

  • Choose the right pork chops. Look for bone-in pork chops that are about 1-inch thick. This will help them stay juicy and flavorful during cooking.
  • Marinate the pork chops. Marinating the pork chops in a mixture of orange juice, olive oil, garlic, and herbs will help them absorb flavor and stay tender.
  • Cook the pork chops over medium heat. This will help them cook evenly without burning.
  • Baste the pork chops with the marinade while they are cooking. This will help keep them moist and flavorful.
  • Use a meat thermometer to check the internal temperature of the pork chops. They are done when they reach an internal temperature of 145 degrees Fahrenheit.
  • Let the pork chops rest before serving. This will help the juices redistribute throughout the meat, making them even more tender and flavorful.

Conclusion:

Orange pork chops with tarragon is a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork chops are marinated in a mixture of orange juice, olive oil, garlic, and herbs, then cooked over medium heat until they are tender and juicy. The tarragon adds a bright and flavorful touch to the dish. Serve the pork chops with roasted vegetables or mashed potatoes for a complete meal.
