1-1/2 pounds orange roughy or other whitefish fillets
1/2 cup orange juice
1/4 cup ketchup
2 tablespoons canola oil
2 tablespoons reduced-sodium soy sauce
2 tablespoons lemon juice
1/4 teaspoon pepper
1 tablespoon sesame seeds, toasted

Steps:

  • Cut fillets into four pieces if necessary; set side. In a large bowl, combine the orange juice, ketchup, oil, soy sauce, lemon juice and pepper. Remove 1/4 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add fillets. Seal bag and turn to coat; refrigerate for 2 hours, turning once or twice., Drain and discard marinade. Place fillets on a broiler pan coated with cooking spray. Broil 4-6 in. from the heat for 5-6 minutes on each side or until fish flakes easily with a fork, basting occasionally with reserved marinade. Sprinkle with sesame seeds.

1 large clove garlic, pressed

2 lbs orange roughy fillets, cut to make 4 pieces
1/2 teaspoon ground black pepper
2 tablespoons olive oil
1 teaspoon olive oil
1 lb mushroom, cut in thin slices
2 teaspoons chopped fresh ginger
2 scallions, including green tops cut 1/2-inch pieces
3 garlic cloves, minced
2 tablespoons soy sauce
1 3/4 teaspoons dry mustard
1/4 cup chicken broth

  • 1 In a large pot or large fry pan with lid bring about 1" water to boil, season fish with pepper ( soy sauce has enough salt ) . If fillets are thin, fold in half, put fillets in a steamer basket over the boiling water. Reduce the heat to moderately high and steam until just done, about 10 minutes for folded 1/2" fillets. Transfer to plates.

1 large orange roughy fillet (mine was a little over 1/2 pound)
pepper
1 cup orange juice
2 tablespoons dried lavender
2 carrots, peeled and cut into julienne stripes
3 scallions, sliced into julienne strips
1 teaspoon peanut oil
1 cup white wine
2 tablespoons orange liqueur (I skipped the liqueur) (optional)

Steps:

  • Pepper both sides of the fish.
  • Pour orange juice in a measuring cup (I used ready-made but imagine freshly squeezed from 2 oranges will be so much better), stir in lavender and white wine and set aside.
  • Heat peanut oil (or use unsalted butter) in small skillet, stirring to coat until tender (5 minutes).
  • Meanwhile in a large skillet, suitable for poaching fish, add orange juice mixture and bring to a boil over medium high heat. Add fish and lower heat to a simmer until fish is tender and flakes with a fork (10 - 15 minutes). Remove fish to a platter and keep warm.
  • Add orange liqueur, if using, to pan and turn up heat and reduce by half. Return fish to pan until heated through.

1 ¼ cups finely chopped onions
1 ½ tablespoons lemon pepper
1 tablespoon Italian seasoning
1 teaspoon ground black pepper

12 ounces plain nonfat yogurt
¼ cup grated Parmesan cheese
¾ pound orange roughy fillets
2 tablespoons Italian seasoned bread crumbs
paprika to taste
3 sprigs fresh parsley, for garnish

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking pan with aluminum foil, and coat with cooking spray.
