ORANGE ROUGHY MARGARITA
A tantalizing recipe that was quick to make and delicious to boot! My wife and I enjoyed it with quiet romantic music, candlelight, and flowers. The taste and experience was, needless to say, memorable! I hope you like it too! I am lazy at times and instead of making my own salsa, I used store-bought brand name salsa. It was good as well, while saving me time and work.

Tips:
- Choose fresh, sustainable orange roughy. Look for fish that is bright in color and has a firm texture. Avoid fish that is dull or has a slimy texture.
- Use high-quality ingredients for the salsa. The fresher and more flavorful the ingredients, the better the salsa will be. Use ripe tomatoes, fresh cilantro, and a good quality olive oil.
- Don't overcook the fish. Orange roughy is a delicate fish that cooks quickly. Overcooking will make it dry and tough.
- Serve the fish immediately. Orange roughy is best served hot out of the oven, with the salsa spooned on top.
Conclusion:
Orange roughy with Montreal salsa is a delicious and easy-to-make dish that is perfect for a weeknight dinner. The fish is flaky and tender, while the salsa is flavorful and refreshing. This dish is sure to please everyone at the table.
