ALABAMA'S ORANGE SLICE COOKIES

Alabama's Orange Slice Cookies image

ALABAMA: Munch your way across the USA. Brenda Jucknies, the state of Alabama is now represented. This recipe is from "Capitol Cookies" with recipes from every state & Washington, DC. This recipe was submitted by Central Alabama Womens's Racing Auxilary, Montgomery. AL, Lois Rewis, Chairperson. I personally have not made these...

Provided by Bea L.

Categories     Cookies

Number Of Ingredients 11

1 1/2 c brown sugar, firmly packed
1/2 c vegetable shortening
2 eggs
2 c all purpose flour, sifted
1 tsp baking soda
1/2 tsp salt
1 lb orange slice candy
1/2 c additional flour
1/2 c flaked coconut
1/2 c chopped pecans
1/2 c rolled oats

Steps:

  • 1. Preheat oven to 325. Cream sugar, shortening and eggs until light & fluffy. Sift 2 cups flour with soda and salt. Blend into creamed mixture.
  • 2. *Dice orange slice candy with kitchen shears (see Cindy's tips below). Mix with 1/2 cup flour and add candy mixture to first mixture.
  • 3. Stir in coconut, nuts and oats. Roll into 1" balls (see Cindy's tips below). Place on a greased cookie sheet and press with a fork. Bake at 325 for 10-12 minutes.
  • 4. *Note: When dicing candy, dip kitchen shears in powdered sugar frequently...see Cindy's tips below.
  • 5. Tips: Here are some tips from our fellow member, Cindy Strawser...she cut up Cherry and Orange slices and to the coconut, oats and nuts she added chocolate chips. Also, instead of having to keep dipping the shears into the powdered sugar...she cut the candies down the middle and dipped them in the powdered sugar and they sliced up great. No sticky shears to mess with. She also did not roll each cookie into a ball but dropped them from the spoon and mashed them down a bit with her fingers. She stated that this made them a little on the thick side and not flat..but NOT too thick. She said she ended up with approximately 3 1/2 dozen cookies. Thanks for the tips, Cindy!:)

ORANGE SLICE COOKIES

ORANGE SLICE COOKIES image

Chewy, orangey, full of flavor..these are a terrific cookie to make anytime of year!

Provided by Bryson Hatfield

Categories     Cookies

Time 50m

Number Of Ingredients 8

1/2 lb candied orange slices, cut into small pieces
1/4 lb pecans, chopped fine
1 1/4 c brown sugar, firmly packed (i use dark brown)
1 c all-purpose flour
1/2 tsp baking powder
dash of salt
2 large eggs, beaten
1 1/2 tsp pure vanilla extract

Steps:

  • 1. PREHEAT OVEN TO 350 DEGREES. GREASE AND FLOUR A 9 X 13" PAN.
  • 2. SIFT FLOUR INTO A LARGE MIXING BOWL. STIR IN ORANGE SLICES, PECANS, BROWN SUGAR, BAKING POWDER AND SALT.
  • 3. ADD EGGS AND VANILLA.
  • 4. THE MIXTURE WILL BE STIFF. NO LIQUID IS NEEDED. POUR INTO PREPARED PAN.
  • 5. BAKE FOR 35 MINUTES, OR UNTIL GOLDEN CRUST IS FORMED. COOL.
  • 6. CUT INTO 2" SQUARES AND ROLL IN CONFECTIONER'S SUGAR.

Tips:

  • Chill the dough: Chilling the dough before baking helps prevent the cookies from spreading too much and makes them easier to handle.
  • Use fresh oranges: The flavor of fresh oranges is far superior to that of bottled or frozen juice. If you can't find fresh oranges, you can use bottled or frozen juice, but the cookies won't be as flavorful.
  • Grate the orange zest finely: Finely grated orange zest will distribute the flavor more evenly throughout the cookies.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix just until the ingredients are combined.
  • Bake the cookies at the right temperature: The cookies should be baked at 350 degrees Fahrenheit (175 degrees Celsius). If the oven is too hot, the cookies will brown too quickly and the inside will be undercooked. If the oven is too cool, the cookies will take too long to bake and they will be dry.
  • Let the cookies cool before frosting: Let the cookies cool completely before frosting them. If you frost the cookies while they are still warm, the frosting will melt and run off.

Conclusion:

Orange slice cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are also a great way to use up leftover oranges. With a few simple ingredients and a little bit of time, you can enjoy these delicious cookies at home. So next time you have a craving for something sweet, give orange slice cookies a try!
