This recipe came from Marlene Koch's Splenda Recipes book that I have. It is sugar-free, low fat and low calorie. I added the cream cheese and vanilla to the glaze. I also added nuts to the original batter recipe.

ORANGE-POPPY TEA BREAD

Orange-Poppy Tea Bread image

I am a big fan of tea breads (or quick breads) and this one has a nice, citrussy quality that is a real treat. This bread does need to sit overnight in order for the flavors to blend; however, I have not included that in the preparation time, so plan accordingly.

ORANGE TEA BREAD

Orange Tea Bread image

This recipe is from the 1983 Southern Living Christmas Book. I have made this is past with lots of raves.

Provided by Maryland Jim

Categories     Quick Breads

Time 1h15m

Yield 1 loaf

Number Of Ingredients 10

2 cups all-purpose flour
1/2 cup sugar
1 teaspoon salt
1 teaspoon baking soda
1 egg, beaten
1/4 cup butter, melted
1 teaspoon grated orange rind
1 teaspoon grated lemon rind
1 cup orange juice
1 cup chopped pecans

Steps:

  • Combine flour, sugar, salt, and soda, add the remaining ingredients, mixing well. Pour into a greased 9X5 loaf pan. Bake at 350 for 50-60 minutes.

Tips:

  • Use fresh oranges for the best flavor. If you don't have fresh oranges, you can use orange juice concentrate, but the flavor will not be as good.
  • Grate the zest of the oranges before juicing them. This will help to release the flavorful oils from the zest.
  • Don't overmix the batter. Overmixing can make the bread tough.
  • Bake the bread until a toothpick inserted into the center comes out clean.
  • Let the bread cool completely before slicing and serving.

Conclusion:

Orange tea bread is a delicious and easy-to-make quick bread that is perfect for breakfast, brunch, or a snack. It is also a great way to use up any leftover oranges. With its moist texture, sweet orange flavor, and hint of tea, this bread is sure to be a hit with everyone who tries it.
