ORZO / TOMATO SALAD WITH FETA AND OLIVES

Orzo / Tomato Salad with Feta and Olives image

We usually make this salad once a week when we can get ripe local tomatoes and usually double or triple the recipe.

Time 25m

Yield 6 serving(s)

Number Of Ingredients 9

1 cup orzo pasta
1 cup feta cheese, diced
3 tablespoons fresh parsley, chopped
3 tablespoons fresh dill, chopped
1 tomatoes, coarsely chopped (ripe)
1/4 cup virgin olive oil
1/4 cup green olives
1/8 cup lemon juice
salt and pepper

Steps:

  • Cook orzo according to package for al dente. Drain and rinse with cold water.
  • Once orzo has cooled, in serving bowl mix orzo, olives, feta, parsley, dill, and tomato.
  • In small bowl, whisk together oil and lemon juice. Mix into salad.
  • Salt and pepper to taste. Refrigerate and chill before serving.
  • If you use dried dill, be sure to use plenty.
  • Serves: 6 as a side dish.
  • Also great as a main dish for lunch.

Tips:

  • Use the right type of orzo. For this recipe, it's best to use a small, pasta shape like orzo or risoni. These shapes will hold the sauce and vegetables well.
  • Cook the orzo al dente. This means that the pasta should be cooked until it is tender but still has a slight bite to it. Overcooked orzo will be mushy and won't hold its shape well in the salad.
  • Use fresh, ripe vegetables. The vegetables in this salad should be at their peak of freshness. This will give the salad the best flavor and texture.
  • Don't overdress the salad. A little bit of dressing goes a long way in this salad. Too much dressing will weigh it down and make it soggy.
  • Serve the salad immediately. This salad is best served immediately after it is made. The orzo will start to absorb the dressing and become soft if it sits for too long.

Conclusion:

This orzo with feta, cucumber, and tomato salad is a refreshing and flavorful side dish or main course. It's perfect for summer picnics and potlucks. The salad is also a good source of protein, fiber, and vitamins. With its simple ingredients and easy-to-follow instructions, this salad is a great option for busy weeknights or lazy weekends.
