ACTUALLY DELICIOUS TURKEY BURGERS

Actually Delicious Turkey Burgers image

This is a simple and delicious recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves.

These tasty burgers incorporate shredded Gruyère cheese and Dijon mustard in the patty, rather than on top, which prevents the bun from getting soggy. Breadcrumbs add even more texture.

Time 30m

Yield 4 servings

Number Of Ingredients 11

1 cup roughly chopped fresh chives
2 tablespoons olive oil
2 pounds free-range ground turkey meat
1/4 cup finely diced shallots
2 tablespoons Dijon mustard
1 tablespoon kosher salt
1 red bell pepper, finely diced
4 brioche burger buns
4 homemade or store-bought roasted tomato halves
1 bunch watercress, cleaned and stemmed
1/2 cup homemade or store-bought ranch dressing

Steps:

  • Place the chives in the pitcher of a blender with the olive oil. Blend until smooth.
  • In a medium bowl, add the chive puree, turkey, shallots, mustard, salt and bell peppers. Using clean hands, blend the mixture together until incorporated. Portion the turkey into 4 large burger patties and place on a tray and refrigerate.
  • On a hot grill or in a hot saute pan, sear the burgers on each side and then reduce the heat or move the burgers to a cooler spot on the grill, and continue to cook for 10 to 12 minutes. To test for doneness, poke the burgers with a skewer and press down to see if the juices run clear, or a meat thermometer inserted in the center reads 150 degrees F.
  • Split and toast the buns, and then top each with a burger, a piece of roasted tomato, some watercress and some ranch dressing. Top each with the other half of the buns, then place a large skewer through the burgers and serve!

WORLD'S BEST TURKEY BURGER

World's Best Turkey Burger image

Yes, there is a turkey burger that my red meat eating boys will eat! After several attempts of trial and error - I have come up with a flavorful, juicy burger that has made it into our regular rotation of meals. Makes 5-6 large, thick burgers. Watch closely when cooking for the first time, because the ricotta - which adds the extra moisture - can burn easily.

Categories     Poultry

Time 30m

Yield 6 serving(s)

Number Of Ingredients 9

2 lbs ground turkey (I use 7% fat rather than fat free)
3/4 teaspoon salt
1/2 teaspoon cracked black pepper
4 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
4 teaspoons Dijon mustard
2/3 cup ricotta cheese

Steps:

  • Mix all ingredients together with hands.
  • Form into patties of desired size and thickness. If you keep them fairly thick, they will be moister.
  • Place into lightly greased, non stick skillet (I like using my cast iron skillet)on medium high. Cook without moving until bottom side is dark brown and crusted - appx 4-5 minutes.
  • Turn over, then reduce heat to medium and cook 8-10 minutes longer or until center is no longer pink and juices run clear.
  • I serve on ciabatta rolls with mayo, more Dijon, a slice of pepper jack cheese, lettuce and tomato. Yum!

Tips:

  • Use fresh, high-quality ingredients: Fresh ground turkey, flavorful seasonings, and crisp vegetables will make a big difference in the taste of your turkey burgers.
  • Don't overmix the turkey: Overmixing can make the burgers tough. Mix just until the ingredients are well combined.
  • Form the burgers gently: Don't pack the turkey mixture too tightly. This will also make the burgers tough.
  • Cook the burgers over medium heat: This will help to prevent the burgers from drying out.
  • Don't flip the burgers too often: Flipping the burgers too often can also make them dry out. Flip them only once, when they are cooked about halfway through.
  • Let the burgers rest before serving: This will help the juices to redistribute throughout the burgers, making them more tender and juicy.

Conclusion:

Turkey burgers are a healthy and delicious alternative to traditional beef burgers. They are lower in fat and calories, and they are a good source of protein. With a little planning and effort, you can make turkey burgers that are just as flavorful and juicy as beef burgers. So next time you're in the mood for a burger, give turkey burgers a try!
