1 shallot
1 tablespoons red wine vinegar
Coarse grain salt
2 tablespoons capers, rinsed
1 cup fresh flat-leaf parsley
1/2 cup toasted almonds
Extra-virgin olive oil

Steps:

  • Preheat the oven to 450 degrees F.

My DH is not a fan of any fish that is not deep fried, or of Salmon, I had to find something that he would like and would fit into his diet! I combined an oven fried eggplant method into this and he loved it!

7 1/2 ounces pink salmon (1 can)
1/4 cup seasoned bread crumbs (more if needed)
1 large egg, beaten
1 1/2 tablespoons mayonnaise
1/4 cup green onion
1/4 cup dried parsley
1/2 teaspoon garlic salt
1/2 teaspoon lemon pepper
1/8 teaspoon pepper
mayonnaise, as needed
1/2 cup panko breadcrumbs
1/4 cup parmesan cheese
1 tablespoon italian seasoning, Tony's seasoning, etc mixed-as desired
cooking spray

Steps:

  • Mix Salmon, and first 8 ingredients together, use large egg, if seems dry, add mayo untill it seems moist enough form into 4 patties and refrigerate for at least 1 hour, to firm. Mix rest of dry ingredients in a bowl. When oven is hot, spread patties with mayonaise, one side at a time, place in panko mixture, to absorb as much as possible, repeat with other side, place on cookie sheet sprayed with cooking spray and bake in 425 degree oven for 10 min., turn patties over and cook for 10 minutes more, checking to see if they are done to your likeness. Oven fries or sweet potato fries can be done at the same time and go great with this!

1 tablespoon olive oil, divided, or to taste
5 cloves garlic, diced
1 (2 inch) piece fresh ginger, or to taste, peeled and diced
1 (1 pound) filleted side of salmon, skin removed
salt to taste
freshly ground black pepper to taste
1 tablespoon unsalted butter, or more to taste
1 tablespoon rice vinegar, or to taste
1 tablespoon oyster sauce
1 teaspoon Chinese chile paste
½ cup hoisin sauce
2 tablespoons plum sauce
2 tablespoons chicken broth, or more as needed
1 teaspoon soy sauce
3 scallions, chopped, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat 1/2 of the oil in a skillet over medium heat. Cook and stir 1/2 of the garlic and ginger until softened, 3 to 5 minutes. Remove from heat and cool for 10 minutes.
