When I lived in Washington, we had these regularly when the Walla Walla "sweets" came in. They are deliciious and it's so simple! Makes a great appetizer or side dish.

1 walla walla onion (or sweet onion)
1 tablespoon butter
1 beef bouillon cube (I prefer Trader Joe's)

Steps:

  • Preheat oven to 350°F.
  • Peel outer dry skin from onion and wash.
  • Cut hole in top of onion large enough to put boullion cube and butter.
  • Fill with cube with butter then boullion cube or crystals.
  • Place onion on aluminum foil and wrap around onion with slight "vent" in top.
  • Bake for 1 hour.

8 large sweet onions, peeled
1/2 cup butter, melted
1/2 cup Burgundy wine or beef broth
8 teaspoons beef bouillon granules
1 teaspoon dried thyme
1 teaspoon pepper
1-1/2 cups shredded Swiss cheese

Steps:

  • Cut each onion into six wedges to within 1/2 in. of the bottom. Place each onion on a piece of heavy-duty foil (about 12 in. square)., In a small bowl, combine the butter, wine, bouillon, thyme and pepper. Spoon over onions; sprinkle with cheese. Fold foil around each onion and seal tightly. Place on a baking sheet. Bake at 425° for 40-45 minutes or until onions are tender. Open foil carefully to allow steam to escape.

6 medium sweet onions (Vidalia, Maui, Spanish or Walla Walla)
1 cup chicken stock, low sodium
1/2 cup dry white wine
1/4 teaspoon pepper
1/4 teaspoon dried rosemary or 1 teaspoon chopped fresh rosemary
1/2 teaspoon fresh thyme or 1 pinch dried thyme
3 tablespoons parmesan cheese (pure parmesan not Kraft)

Steps:

  • Oven should be 375f degrees.
  • Peel the onions, trim the root and cut straight across the top of the onion so it can sit level when inverted Place onions in a baking dish so they snuggle firmly to each other with the root end up Combine the stock, wine, pepper, rosemary& thyme.
