This is SOOOO good! You can double the complete recipe and bake in a roaster pan, throw in a chopped green bell pepper and/or a jalapeno pepper also if desired! Four small turkey legs can be used in place of the chicken, if using larger turkey legs then double the cranberry sauce and BBQ sauce, also the cooking time will need to be increased.

6 -8 chicken pieces
1 tablespoon vegetable oil
2 tablespoons butter
salt and black pepper
1 onion, chopped
1 -2 tablespoon minced fresh garlic (or to taste)
1 large celery rib, finely diced
1 pinch cayenne pepper (optional)
1 (16 ounce) can ocean spray whole berry cranberry sauce
1 cup favorite barbecue sauce

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • Heat butter with oil in a large skillet over medium-high heat.
  • Season the chicken with salt and pepper, then add to the skillet; cook on both side until lightly browned, then place the chicken skin-side up into the baking dish (leave the drippings in the pan).
  • Add in the onion, celery, garlic and cayenne pepper (if using) adding in a little more oil if needed; sate for about 3 minutes; stir in the cranberry sauce and BBQ sauce; bring to a light simmer, stirring until completey combined, then pour over the chicken.
  • Bake uncovered for about 50 minutes or until chicken is tender and cooked through, basting with the sauce a couple times during baking.

2 lemons, zest of
1 cup barbecue sauce (your favorite)
2 teaspoons italian seasoning (or Mrs Dash)
4 garlic cloves, peeled and mashed
1 sprig fresh rosemary
1 whole chicken

Steps:

  • Preheat oven to 350°F Cut zested lemons in half, squeeze out juice into a small bowl and set aside halves. Add zest, barbecue sauce, and seasonings to the lemon juice; mix well.
  • Place chicken in baking pan. Place 2 of the lemon halves along with the mashed cloves of garlic and roesmary sprig into the cavity of the chicken.
  • Rub skin of chicken all over with remaining 2 lemon halves and discard. Tie legs together with twine.
  • Bake 1 1/2 - 2 hours or until chicken is cooked through to 170F brushing with the barbecue sauce mixture every 5 min during the last 20 minutes of baking.
  • Remove chicken from oven, and discard lemon halves and garlic cloves from chicken cavity. Skim fat from drippings in pan, and serve with the chicken.

10 chicken wings
3 tablespoons butter
1 tablespoon onion powder
5 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 cup ketchup
½ cup water
2 tablespoons prepared mustard

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a small saucepan, melt butter or margarine. Add onion powder, sugar, Worcestershire sauce and mustard; mix well. Dilute ketchup with water and add to saucepan mixture. Let simmer for 15 minutes.
  • Place chicken wings in a 9x13 inch baking dish. Pour saucepan mixture over chicken. Bake, uncovered, in the preheated oven for about 45 minutes.

1 c ketchup
2 Tbsp worcestershire sauce
1 tsp hot sauce
1/4 c vinegar
2 Tbsp prepared mustard
2 Tbsp sugar
1 tsp seasoned salt
1 fryer, cut up into 8 pieces, or chicken parts

Steps:

  • 1. Wash the chicken and soak it in a bowl with 2 teaspoons of salt added to 2 cups of water. Drain. Preheat oven to 400 F. Mix together all of the ingredients except the chicken to make the sauce. Place the chicken pieces in a baking dish. Bake on the lowest rack of the oven for 25 minutes. Remove the liquid from th bottom of the pan, and brush the barbecue sauce over the chicken. Return the chicken to the oven and bake for 20 to 25 minutes longer or until tender (it will be done when the leg feels soft when mashed).

3 -4 lbs chicken pieces
1 small onion, chopped
1 cup ketchup
3/4 cup water
1/4 cup apple cider vinegar
2 tablespoons buffalo wing sauce (I use Ken's brand)
2 teaspoons Worcestershire sauce
2 teaspoons prepared yellow mustard, well rounded
2 teaspoons minced garlic
1 tablespoon brown sugar
1 tablespoon canola oil

Steps:

  • Pour canola oil into a large frying pan and heat over medium heat.
  • Add chicken pieces and brown well.
  • Remove chicken and place in a 9x13-inch baking pan.
  • Preheat oven to 350°F.
  • Add onion to the frying pan and stir well; scraping up and brown bits from the chicken.
  • Sauté about 2 minutes.
  • Meanwhile, in a mixing bowl combine remaining sauce ingredients and stir to mix well.

  • Note: If you double the sauce so you have enough for extra dipping, make sure you only pour 1/2 over the chicken before baking. The remainder of the sauce can simmer gently while the chicken bakes.
