Categories     Appetizer

Time 50m

Number Of Ingredients 9

4 pounds chicken wings (, halved at joints, wingtips discarded)
2 Tablespoons baking powder (*aluminum free)
3/4 teaspoon salt
1/2 teaspoon cracker black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1/3 cup Frank's Wings Hot Sauce
1 1/2 cups light brown sugar
1 Tablespoon water

Steps:

  • Adjust your oven rack to the upper-middle position. Preheat oven to 425 degrees F.
  • Line a baking sheet with aluminum foil and place a wire rack (I use a cooling rack) on top. Spray the rack with non-stick spray.
  • Use paper towels to pat the wings dry and place them in a large bowl. It's important to dry them REALLY well!
  • Combine the salt, pepper, garlic powder, paprika, and baking powder in a small bowl. Then sprinkle the seasoning over the wings, tossing to evenly coat.
  • Arrange wings, skin side up, in single layer on prepared wire rack.
  • Bake on the upper middle oven rack, turning every 20 minutes until wings are crispy and browned. The total cook time will depend on the size of the wings but may take up to 1 hour.
  • Remove from oven and let stand for 5 minutes. Transfer wings to bowl and toss with sauce.

Time 1h20m

Number Of Ingredients 4

4 lb / 2 kg chicken wings (, cut into wingettes and drumettes (Note 1))
5 teaspoons baking powder (NOT BAKING SODA / BI-CARB SODA!!)
3/4 teaspoon salt
Oil spray

Steps:

  • If you are organised enough, uncover the chicken wings and leave them in the fridge for a few hours to dry out. Otherwise, use a paper towel to pat the wings dry.
  • Adjust oven racks to upper-middle and lower-middle positions.
  • Preheat oven to 250F/120C (all oven types - standard/convection/fan).
  • Line a baking tray with foil, then place a rack (like a cooling rack) on the foil. Spray the rack with oil spray.
  • Place wings in a large bowl or in a ziplock bag. Add the baking powder and salt, then toss to coat evenly.
  • Place the wings on the baking tray in a single layer with the skin side up. They should just fit snugly. They will shrink when they cook because the fat renders out so don't worry if they look too snug.
  • Place wings on the lower middle oven rack and bake for 30 minutes.
  • Move wings up to the upper middle rack and increase the oven temperature to 425F/220C. Bake for 40 - 50 minutes, rotating the tray halfway through.
  • Remove baking tray from the oven and let it stand for 5 minutes.
  • Toss wings in sauce of choice or serve it on the side to dip / drizzle on the wings, then serve.

CRISPY CHICKEN WINGS

Crispy Chicken Wings image

These chicken wings use corn tortilla chips as breading.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Time 1h

Number Of Ingredients 7

1 teaspoon olive oil, for baking sheets
1 bag (7 to 9 ounces) salted corn tortilla chips
2 large eggs
1 teaspoon paprika
Coarse salt and ground pepper
12 whole chicken wings, (about 3 pounds)
1 cup red or green prepared salsa, for serving (optional)

Steps:

  • Preheat oven to 450 degrees. Line two rimmed baking sheets with aluminum foil; brush lightly with oil. Set aside. In a food processor, pulse chips in two batches until finely ground (you should have about 2 cups ground chips); transfer to a large shallow dish.
  • In a separate bowl, whisk eggs; season with paprika, salt, and pepper. Working in two batches, place wings in egg mixture. Remove wings one by one, letting excess egg fall off. Transfer to dish containing ground chips; toss to coat, patting mixture on with hands. Arrange coated wings on prepared baking sheets.
  • Bake, switching pans from top to bottom shelf halfway through, until lightly browned and tender, 40 to 45 minutes. Season wings with salt. Serve with salsa, if desired.

Tips:

  • Use a wire rack: This will allow the chicken wings to cook evenly and crisp up on all sides.
  • Preheat your oven: This will help the chicken wings cook evenly and prevent them from sticking to the pan.
  • Season the chicken wings generously: This will help them develop a flavorful crust.
  • Don't overcrowd the pan: This will prevent the chicken wings from cooking evenly.
  • Flip the chicken wings halfway through cooking: This will help them cook evenly.
  • Cook the chicken wings until they are golden brown and crispy: This will ensure that they are cooked through.

Conclusion:

Oven-crisp chicken wings are a delicious and easy-to-make appetizer or main course. By following these tips, you can make sure that your chicken wings turn out perfectly every time. You can change the flavor profile of your chicken wings by using different sauces, rubs, seasonings or marinades, making this recipe incredibly versatile. Serve them with your favorite dipping sauce and enjoy!
