Fire up the tiki torches -- it's time for a luau! This delicious slow-roasted pork is rubbed with sea salt and liquid smoke to recall the glorious flavors of pig cooked in a traditional Hawaiian imu. Once cooked and cooled, it can be shredded and served with poi, yams or even on a bun. You may use ordinary sea salt for this recipe if the Hawaiian variety is unavailable.

Tips:

  • Choose a pork shoulder that is at least 5 pounds. This will ensure that you have enough meat to feed a crowd.
  • Score the pork shoulder all over with a sharp knife. This will help the seasonings to penetrate the meat.
  • Generously season the pork shoulder with salt, pepper, garlic powder, onion powder, and cumin. You can also add other spices, such as paprika, chili powder, or oregano.
  • Place the pork shoulder in a large roasting pan. Add some water or broth to the bottom of the pan to prevent the meat from drying out.
  • Cover the roasting pan with aluminum foil and roast the pork shoulder in a preheated oven at 325 degrees Fahrenheit for 8-10 hours, or until the meat is fall-apart tender.
  • Remove the pork shoulder from the oven and let it rest for 30 minutes before pulling it apart.
