An easy to prepare breakfast dish that can be made the night before and baked in the morning. This can easily be made vegetarian with a few substitutions...that is what a friend of mine did.

5 eggs or 1 cup egg substitute
1 1/2 cups frozen hash browns
4 ounces shredded cheese
1/2 cup cottage cheese
1/3 cup milk
1/4 cup chopped onion
1/4 teaspoon salt
1/4 teaspoon pepper
4 ounces ham, chopped or ground
1 tomatoes, chopped (optional)

Steps:

  • Beat eggs until foamy.
  • Stir in remaining ingredients.
  • Pour into an oiled 9" square or round pan.
  • Cover& refrigerate overnight.
  • Preheat oven to 325; remove cover and bake 50 min or until knife inserted near the center comes out clean.

4 eggs
2 1/2 cups sliced potatoes
4 ounces shredded swiss cheese
1/2 cup cottage cheese
1/3 cup whole milk
1 green onion, thinly sliced
1/4 teaspoon salt
1/4 teaspoon pepper
4 ounces ham or 4 ounces turkey, chopped into small pieces
1/2 cup crushed corn flakes

Steps:

  • In a medium bowl, beat eggs until foamy.
  • Stir in remaining ingredients, except corn flakes.
  • Pour into a 9 inch pie pan that has been sprayed with nonstick cooking spray or lightly greased.
  • Sprinkle with corn flakes.
  • Cover and refrigerate overnight.
  • Preheat oven to 325 degrees.

8 bacon strips, diced
1/4 cup crushed cornflakes
5 large eggs, lightly beaten
1/2 cup whole milk
1/2 cup 4% cottage cheese
1-1/2 cups shredded cheddar cheese
1 green onion, sliced
1/2 teaspoon salt
1/8 teaspoon pepper
2-1/2 cups frozen cubed hash brown potatoes

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 2 teaspoons drippings. Stir reserved drippings into cornflakes; set aside. , In a large bowl, combine the eggs, milk, cottage cheese, cheddar cheese, onion, salt and pepper until blended. Stir in hash browns. Pour into a greased 9-in. pie plate. Sprinkle with bacon and cornflake mixture. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. ½ pound bulk pork sausage
2 (12 ounce) packages frozen pre-cooked hash brown patties, thawed
½ pound diced fully cooked ham
2 cups shredded Monterey Jack cheese
2 teaspoons dry mustard
1 ½ teaspoons onion powder
12 large eggs
1 ½ cups evaporated milk
½ cup half-and-half
½ teaspoon kosher salt
½ teaspoon ground black pepper
½ cup shredded sharp Cheddar cheese, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove from heat and let cool slightly, about 5 minutes. Transfer to a large bowl.
