My "grown-up" but kid-friendly version is equally delicious, albeit a bit healthier, I imagine, with pure orange juice, egg white protein powder, fresh oranges and a sprinkle of sliced almonds.

From The Cook's Bible (Christopher Kimball). The cooking time can vary considerably, depending on the size of your hens and the heat level of your grill. Prep time includes time to marinate.

Time P1DT30m

Yield 3-6 serving(s)

Number Of Ingredients 9

1 orange
1 lemon
3 garlic cloves, peeled
1 teaspoon grated fresh ginger
1/2 cup soy sauce
1/4 cup oriental toasted sesame oil
1/4 cup sherry wine or 1/4 cup marsala wine
1 tablespoon brown sugar
3 rock cornish game hens

Steps:

  • Grate the outer layer of peel from the orange and the lemon; juice half the lemon, and place all marinade ingredients in a food processor and blend until smooth.
  • Butterfly the game hens: cut out the backbone with sharp kitchen shears, turn the hen over (breast up) and bend the breast backward where it attaches to the breastbone; place your thumbs on either side of the breastbone and press down while pulling up on the outer sides of the breast with your fingers (I find this difficult--I just take the heels of my hands and smash it).
  • Place hens in a plastic bag with the marinade, force out excess air, seal tight and leave in the refrigerator overnight.
  • Set up grill for indirect cooking. Remove hens from marinade and grill, covered, for about 30 minutes or until breast meat registers 165-170F on an instant-read thermometer (mine took about 45 minutes).

CROCK POT CITRUS GINGER CHICKEN

Crock Pot Citrus Ginger Chicken image

This is one of my favorites. The flavor is best if you marinate the chicken in the sauce overnight or freeze in the sauce and thaw in the fridge overnight before cooking. This can also be baked in the oven in around 30 minutes. Serve over a bed of aromatic rice such as jasmine or basmati rice with a mix of steamed vegetables on the side.

Tips:

  • Make sure to use a bundt pan with a capacity of at least 10 cups, or the ring may overflow.
  • To easily remove the ring from the bundt pan, grease the pan thoroughly before pouring in the batter.
  • For a more intense citrus flavor, use a combination of orange, lemon, and grapefruit zest.
  • If you don't have fresh ginger, you can use 1/2 teaspoon of ground ginger instead.
  • Don't overmix the batter, as this can result in a tough ring.
  • Allow the ring to cool completely before inverting it onto a serving plate.
  • Serve the ring with your favorite glaze, such as a simple syrup, powdered sugar glaze, or cream cheese glaze.

Conclusion:

This overnight citrus ginger ring is a delicious and easy-to-make dessert that is perfect for any occasion.
