Steps:
- Combine the paprika and oregano in a small bowl. Rub the spice mix all over the chicken and marinate chicken for 1 hour in the refrigerator.
- Heat oil in a paella pan over medium-high heat. Saute the chorizo until browned, remove and reserve. Add chicken skin-side down and brown on all sides, turning with tongs. Add salt and freshly ground pepper. Remove from pan and reserve.
- In the same pan, make a sofrito by sauteing the onions, garlic, and parsley. Cook for 2 or 3 minutes on a medium heat. Then, add tomatoes and cook until the mixture caramelizes a bit and the flavors meld. Fold in the rice and stir-fry to coat the grains. Pour in water and simmer for 10 minutes, gently moving the pan around so the rice cooks evenly and absorbs the liquid. Add chicken, chorizo, and saffron. Add the clams and shrimp, tucking them into the rice. The shrimp will take about 8 minutes to cook. Give the paella a good shake and let it simmer, without stirring, until the rice is al dente, for about 15 minutes. During the last 5 minutes of cooking, when the rice is filling the pan, add the lobster tails. When the paella is cooked and the rice looks fluffy and moist, turn the heat up for 40 seconds until you can smell the rice toast at the bottom, then it's perfect.
- Remove from heat and rest for 5 minutes. Garnish with peas, parsley and lemon wedges.

Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your paella soup. Look for bomba or Valencia rice, which are short-grain rices that absorb the flavorful broth well. Use fresh seafood, chicken, and vegetables, and a good quality olive oil.
- Sauté the vegetables before adding the rice: This will help them to release their flavors and add depth to the soup. Use a large pot or Dutch oven so that the vegetables have plenty of room to brown.
- Use a flavorful broth: The broth is the foundation of the paella soup, so it's important to use a flavorful one. You can use a homemade chicken or seafood broth, or a store-bought broth that you doctor up with some additional herbs and spices.
- Cook the rice until it is tender but still has a slight bite to it: Paella soup is traditionally cooked with a slightly soupy consistency, so don't overcook the rice. It should be tender but still have a little bit of a bite to it.
- Add the seafood and chicken towards the end of the cooking time: This will help to prevent them from overcooking and becoming tough. If you are using frozen seafood, be sure to thaw it completely before adding it to the soup.
- Season the soup to taste: Once the soup is cooked, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, paprika, or saffron. You can also add a squeeze of lemon juice or a dollop of crème fraîche for a finishing touch.
Conclusion:
Paella soup is a delicious and versatile dish that can be enjoyed by people of all ages. It's a great way to use up leftover seafood and chicken, and it's also a healthy and affordable meal. With a little bit of planning and effort, you can easily make a delicious paella soup at home. So next time you're looking for a quick and easy meal, give paella soup a try.
