Number Of Ingredients 22

1 cup dry white wine
1/2 cup lemon juice
2 tablespoons minced garlic
1 tablespoon shallot, minced
1 teaspoon salt
1/4 teaspoon black pepper
1 dash Worcestershire sauce
1 dash hot pepper sauce
1/2 cup heavy cream
1 cup butter, room temperature (2 sticks)
1/2 tablespoon paprika
1/2 tablespoon salt
1/2 tablespoon garlic powder
1/4 tablespoon black pepper
1/4 tablespoon onion powder
1/4 tablespoon cayenne pepper
1/4 tablespoon dried oregano
1/4 tablespoon dried thyme
2 lbs flounder fillets (or cod)
1/2 cup flour (or 1/2 cup panko mixed with 2 tablespoons finely chopped almonds)
2 tablespoons olive oil
fresh parsley, for garnish

Steps:

  • LEMON BUTTER SAUCE: Heat a large skillet over high heat. Add the wine, lemon juice, garlic, and shallots. Cook for 3 minutes.
  • Stir in the salt, pepper, Worcestershire, and hot sauce and simmer until the mixture is somewhat syrupy, about 3 minutes.
  • Stir in the cream and cook for 1 minute. Over low heat, whisk in the butter a few pats at a time. Continue whisking until all of the butter is incorporated into the sauce. Serve immediately or keep warm until ready to use.
  • FISH: Mix fish spice blend ingredients together. Season both the fish and flour with spices and dredge the fish in the seasoned flour or panko/almond mixture, coating completely.
  • In a large saute pan, heat the olive oil. Add the fish to the saute pan, pan-frying for about 4 minutes on each side.
  • SERVE: Drizzle some lemon butter sauce on each plate. Top with fish and drizzle more sauce over top of fish. Top with fresh parsley.

Tips:

  • Selecting Fresh Flounder: Choose flounder fillets that are firm to the touch, with a mild, briny aroma. Avoid fillets that are slimy or have an off-putting odor.
  • Seasoning: Before pan-frying, season the flounder fillets generously with salt and pepper. You can also add other herbs and spices of your choice, such as paprika, garlic powder, or dried thyme.
  • Use High-Quality Butter: For the lemon butter sauce, use unsalted butter for better control over the saltiness of the sauce. Look for European-style butter, which has a higher fat content and richer flavor.
  • Clarify the Butter (Optional): Clarifying the butter helps remove the milk solids and water, resulting in a purer butterfat that won't burn easily. This step is optional but recommended for a more flavorful and golden brown sauce.
  • Use Fresh Lemon Juice: Fresh lemon juice adds a bright and tangy flavor to the sauce. Avoid using bottled lemon juice, as it lacks the same zest and aroma.
  • Don't Overcook the Flounder: Flounder is a delicate fish that cooks quickly. Overcooking can result in dry and tough fish. Cook the fillets for 2-3 minutes per side, or until they are opaque and flake easily with a fork.
  • Serve Immediately: Pan-fried flounder with lemon butter sauce is best served immediately after cooking. The fish and sauce will lose their flavor and texture if they sit for too long.

Conclusion:

Pan-fried flounder with lemon butter sauce is an easy and flavorful dish that can be prepared in under 30 minutes. By following these tips, you can ensure that your flounder is cooked to perfection and that the lemon butter sauce is rich, creamy, and bursting with flavor. Serve this dish with roasted vegetables, mashed potatoes, or a simple green salad for a satisfying and delicious meal.
