POTATO AND CHEESE FLAUTAS

Potato and Cheese Flautas image

This is one of my family's favorite dinners and I can't blame them. These potato flautas are so crunchy and delicious! I often make these in larger quantities for parties and gatherings and they are always the first thing to go. Be creative with your garnishes and enjoy! I garnish with shredded lettuce, crumbled queso fresco cheese, salsa or guacamole, Mexican crema or sour cream, and sliced avocado.

Yield 6

Number Of Ingredients 6

4 large potatoes, peeled and cubed
1 cup shredded Chihuahua cheese
1 tablespoon milk
1 teaspoon salt
24 (6 inch) corn tortillas
1 cup oil for frying, or as needed

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain.
  • Mash potatoes with milk and salt. Stir in Add Chihuahua cheese.
  • Heat 1/2 inch oil in a deep skillet over medium heat.
  • Meanwhile, wrap tortillas in a dish towel or paper towel and microwave on high power for 2 minutes. If you don't steam them, they will crack when you roll them.
  • Fill each tortilla with a spoonful of the mashed potato mixture, roll tightly, and secure with a toothpick.
  • When oil is hot enough to make the flautas sizzle, put 6 to 8 flautas in the oil; make sure there is room between them or they won't cook evenly. Fry until golden brown and crispy, about 5 minutes. If the oil doesn't completely cover the flautas, flip over and fry the other sides. Drain on paper towels. Serve hot.

OVEN FRIED FLAUTAS

Time 1h15m

Yield 6 serving(s)

Number Of Ingredients 12

1 lb extra lean ground beef
1 medium onion
1 teaspoon minced garlic
1 1/2 teaspoons chili powder
1 teaspoon dry oregano
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1/4 teaspoon pepper
2 teaspoons Worcestershire sauce
1/2 cup mild chili sauce or 1/2 cup canned tomato sauce
12 corn tortillas
cooking spray

Steps:

  • Heat oven to 400 degrees.
  • Place ground beef, onion, and garlic in a large skillet that has been sprayed with cooking spray and brown over medium-high heat.
  • Using a spatula crumble beef into small pieces as it cooks.
  • Add the chili powder, oregano, paprika, cumin, pepper, Worcestershire sauce and chile sauce to the pan and mix well.
  • Wrap 6 of the corn tortillas at a time in a damp kitchen towel and warm briefly in the microwave- just enough to soften.
  • For each flauta, spray both sides of 2 tortillas with cooking spray.
  • Lay the tortillas down so they overlap by 4 inches.
  • Spoon 1/4 cup or so of filling down the side of the paired tortillas and roll up tightly, the beef mixture should be in the center.
  • Place on a heavy cookie sheet.
  • Repeat with the others.
  • Bake flautas, at 400 degrees until the tortillas are crisp, about 15 minutes.
  • Serve with salsa, sour cream and guacamole.

Tips:

  • Choose the right mushrooms. For this recipe, cremini or shiitake mushrooms are good choices. They have a meaty texture that holds up well when cooked.
  • Cook the mushrooms properly. When cooking the mushrooms, be sure to cook them over medium-high heat so that they brown and caramelize. This will give them a delicious flavor.
  • Use a good quality cheese. The type of cheese you use will have a big impact on the flavor of the flautas. Use a cheese that melts well and has a strong flavor, such as cheddar cheese or mozzarella cheese.
  • Be careful when rolling the flautas. To prevent the flautas from breaking, be sure to roll them tightly. You can also use a toothpick to secure the edges of the flautas.
  • Serve the flautas with your favorite dipping sauce. Flautas are traditionally served with guacamole, salsa, or sour cream. You can also serve them with a spicy dipping sauce, such as a chipotle sauce or a jalapeño sauce.

Conclusion:

Pan-fried mushroom and cheese flautas are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks. With a few simple tips, you can make sure that your flautas turn out perfectly every time.
