Time 45m

Yield 6 to 8 servings

Number Of Ingredients 8

6 medium zucchini (2 1/2 to 3 pounds total)
Good olive oil
Kosher salt and freshly ground black pepper
1 tablespoon minced garlic (3 cloves)
2 tablespoons minced fresh parsley leaves
2 tablespoons julienned fresh basil leaves
1/2 cup freshly grated Italian Parmesan cheese
3/4 cup panko (Japanese bread flakes)

Steps:

  • Preheat the oven to 425 degrees F.
  • Trim the stem end of the zucchini, cut them in half lengthwise and scoop out a small channel of seeds with a regular teaspoon. Place the zucchini in one layer on a sheet pan, brush generously all over with olive oil and turn the zucchini cut-side down. Sprinkle with 1 teaspoon salt and roast for 12 to 15 minutes, until just tender but still firm when tested with the tip of a small paring knife.
  • Meanwhile, make the bread crumbs. In a medium bowl, combine the garlic, parsley, basil, Parmesan, 1 teaspoon salt and 1/2 teaspoon pepper. Add the panko and 3 1/2 tablespoons of oil and mix well.
  • Turn the zucchini cut-side up and spoon a heaping tablespoon of the panko mixture evenly on each zucchini. Bake for another 8 to 10 minutes, until the panko is crispy. Serve hot, warm or at room temperature.

Roast Chicken Legs with Cilantro Gremolata image

Here is a fast and flavorful dinner of chicken dusted liberally with cumin and served beneath a shower of lime juice, fresh chopped cilantro and garlic. It goes beautifully with rice and beans, though warm, buttered toast does nicely as well.

Provided by Sam Sifton

Categories     dinner, weekday, main course

Time 45m

Yield Serves 8

Number Of Ingredients 8

8 large chicken legs
Kosher salt
Freshly ground black pepper
3 tablespoons olive oil
1 tablespoon ground cumin
1/2 cup roughly chopped fresh cilantro
Juice of 2 limes
2 cloves garlic, peeled and minced

Steps:

  • Preheat the oven to 500 degrees.
  • Season the chicken aggressively with salt and pepper, then place, skin-side up, in a shallow baking pan and toss with a drizzle or two of the olive oil. Dust with ground cumin and place in the oven.
  • Roast the chicken until its skin is crisp and a knife inserted and removed from the flesh of the thigh results in clear juices, about 30 minutes, then remove from the oven and allow to rest for 5 minutes.
  • As the chicken cooks, combine the cilantro, lime juice, garlic and the remaining olive oil to make the gremolata. Sprinkle the gremolata over the chicken and serve, ideally with rice and beans.

Tips:

  • Choose firm and tender zucchini: Avoid zucchini that is too large or has blemishes. The best zucchini for roasting is about 6 inches long and has a deep green color.
  • Slice the zucchini evenly: This will ensure that the zucchini cooks evenly. You can use a sharp knife or a mandoline to slice the zucchini.
  • Don't overcrowd the pan: When roasting the zucchini, make sure to leave enough space between the pieces so that they can cook evenly. If you overcrowd the pan, the zucchini will steam instead of roast.
  • Roast the zucchini until it is tender: The zucchini should be tender when pierced with a fork. Depending on the thickness of the zucchini, this will take about 10-15 minutes.
  • Make the gremolata just before serving: The gremolata is a flavorful herb sauce that is made with cilantro, mint, garlic, and olive oil. It is best to make the gremolata just before serving so that the herbs stay fresh.

Conclusion:

Pan-roasted zucchini with cilantro-mint gremolata is a simple but delicious side dish. The zucchini is roasted until tender and then topped with a flavorful gremolata. This dish is perfect for a weeknight dinner or a summer barbecue.
