PAN-SEARED SALMON WITH CELERY, OLIVES AND CAPERS

Pan-Seared Salmon With Celery, Olives and Capers image

The salsa that I spoon over the salmon here is an explosion of contrasting flavors - sweet, salty and sharp - common in Sicilian cooking. I like serving this with sautéed greens and some bread.

Time 45m

Yield 4 servings

Number Of Ingredients 12

2/3 cup/100 grams currants
Generous pinch of saffron
4 salmon fillets (about 4 ounces each), skin on
About 1/2 cup/100 milliliters olive oil
Salt and black pepper
4 sticks celery (about 6 ounces/180 grams), cut into 1/2-inch/1-centimeter dice, leaves removed and reserved for garnish
1/4 cup/30 grams pine nuts, roughly chopped
Scant 1/4 cup/40 grams drained capers, plus 2 tablespoons of their brine
8 large green olives, pitted and cut into 1/2-inch/1-centimeter dice
1/3 cup/20 grams parsley, roughly chopped
1 teaspoon finely grated lemon zest
1 teaspoon lemon juice

Steps:

  • Cover the currants with boiling water and set aside to soak for 20 minutes. In a separate small bowl, mix 1 tablespoon of boiling water with the saffron and also leave for 20 minutes or longer.
  • Gently rub the salmon fillets with 2 teaspoons of the oil, 1/3 teaspoon of salt and a good grind of pepper. Set aside while you make the relish.
  • Add 1/3 cup/75 milliliters of olive oil to a large sauté pan over high heat. Add the celery and pine nuts and fry for 4 to 5 minutes, stirring frequently, until the nuts begin to brown (watch carefully as they can burn quickly). Turn off heat and stir in the capers and their brine, the olives, saffron and its water and a pinch of salt. Drain the currants and add them as well, along with the parsley, lemon zest and juice. Mix well and set aside.
  • In a large skillet, heat 1 tablespoon oil over medium-high heat until it shimmers. Add salmon fillets skin-side down and let cook for 3 minutes, until the skin is crisp. Reduce the heat to medium, flip the fillets over and cook 2 to 4 minutes more (depending on how much you like the salmon to be cooked).
  • Divide the salmon on 4 plates and serve with the warm relish spooned on top. Scatter reserved celery leaves (if using) and serve immediately.

My cast iron skillet gets "happy" when I cook this for the family!

Provided by Martha Ray Deen @MarthaRayDeen

Categories     Fish

Number Of Ingredients 11

4 - fresh salmon fillets (1 inch thick, skin on)
1/2 medium lemon, de-seeded
1 teaspoon(s) fresh ground pepper
1 teaspoon(s) onion powder
1 teaspoon(s) garlic powder
1 teaspoon(s) celery salt
1 teaspoon(s) paprika
2 tablespoon(s) olive oil
2 tablespoon(s) capers, jarred in a liquid
1 dash(es) fresh ground pepper
4 slice(s) fresh lemon for garnish

Steps:

  • Using FRESH salmon fillets, place skin side down on a plate to apply marinade. If you have large fillets, you may prepare two fillets and slice serving portions AFTER cooking.
  • In a small bowl, combine pepper, onion powder, garlic powder, celery salt, and paprika. Stir together to combine.
  • Squeeze 1/2 fresh lemon over fillets then sprinkle seasoning mixture over fillets. Let sit for at least five minutes while oil heats.
  • Heat olive oil in a large heavy skillet over medium heat for 3-5 minutes (a cast iron skillet works best).
  • Place marinated fillets flesh side down into hot oil, then turn heat up to high/medium-high, depending on your stove settings. (Oil should be popping/bubbling when fillets are placed into oiled skillet). Cook for 3-4 minutes (flesh side should be browned), then turn fillets over. Place 1/2 tablespoon jarred capers over each fillet (or 1 tablespoon each if large fillets) and sprinkle lightly with pepper. Lower heat to medium and continue to cook for approximately 5 minutes or until fish flakes easily. (Do not overcook, salmon cooks quickly).
  • Remove salmon from skillet and garnish with a lemon slice. (Cut slice halfway to center and twist for the effect shown in the picture). Garnish plate with more capers if desired.

PAN SEARED SALMON AND COUSCOUS

Pan Seared Salmon and Couscous image

A Cook's Illustrated recipe from "The Best 30 Minute Recipe". This one uses Israeli couscous, so take note. What's phenomenal is the lemon drizzle sauce. It ups the composition 10 fold.

Provided by gailanng

Categories     Low Cholesterol

Time 30m

Yield 4 serving(s)

Number Of Ingredients 11

salmon fillet (skin on or off)
4 -5 tablespoons olive oil (divided)
1 1/2 cups of israeli style couscous
3 cups water (for the couscous)
2 tablespoons of grated lemon zest (use a Microplane grater)
1 -2 minced shallot
4 garlic cloves, minced
2 tablespoons lemon juice (for drizzling oil)
1/2 cup minced fresh chives (for drizzling oil)
kosher salt and fresh coarse ground black pepper
1/3 cup frozen peas (don't need to defrost them)

Steps:

  • Preheat the over to 200 degrees. .
  • Season salmon fillets with salt and pepper.
  • Preheat 2 tablespoons olive oil to smoking over medium high heat in a nonstick 12 inch skillet.
  • Place the fillets in the skillet (flesh side down if skin is on) for five minutes. Don't move them around. Wait to form a nice caramelized crust.
  • Place seared fillets (flesh side "up" if skin is on) in a baking dish and put on the middle rack of your 200 degree oven for about 15 minutes. This will be long enough for the salmon to cook all the way through.
  • Carefully wipe out the skillet with paper towels and put back on medium high heat. Add 1 tablespoon olive oil and heat until it shimmers.
  • Add the couscous to the skillet and stir over the heat until the grains are toasted and light brown. (This is a little tricky. This can go from "raw" to "burnt" in about 2 minutes once the first grains turn tan).
  • When the grains are toasted, add the shallots, lemon zest and minced garlic; stir and cook until fragrant ( 30 secs to 90 secs).
  • Add the water to the skillet (slowly to avoid splattering) and let the mixture come to a boil. Cover the skillet and let cook for about 12 minutes (long enough for the couscous to absorb all the liquid).
  • Once the salmon is in the oven and the skillet full of cous cous is simmering, make a lemon scented chive flavor "drizzling oil" by whisking together 2 tablespoons olive oil, the lemon juice and the minced chives. (This sauce makes the dish.).
  • When salmon is cooked through and couscous has absorbed all the liquid, add the frozen peas to the cous cous and remove from heat. The peas will defrost in a couple of minutes (golden raisins work well, too).
  • Serve the salmon fillets on beds of couscous and pour a bit of the drizzling lemon-oil over each serving. Salt and pepper to taste.

Tips:

  • Choose the right salmon fillet: Look for a thick, firm fillet that is free of bones and skin. Wild-caught salmon is typically considered to be higher in quality than farm-raised salmon.
  • Season the salmon simply: Salt and pepper are all you need to season the salmon before cooking. You can also add a squeeze of lemon juice or a sprinkle of herbs, such as dill or thyme.
  • Sear the salmon over high heat: This will create a crispy crust on the outside of the salmon while keeping the inside moist and tender. Be careful not to overcook the salmon, or it will become dry.
  • Finish the salmon in the oven: After searing the salmon, transfer it to a baking dish and finish cooking it in the oven. This will help to ensure that the salmon is cooked evenly throughout.
  • Serve the salmon with your favorite sides: Roasted vegetables, mashed potatoes, or a simple salad are all great options.

Conclusion:

Pan-seared salmon with lemon and capers is a delicious and easy-to-make dish that is perfect for any occasion. By following these tips, you can create a perfectly cooked salmon fillet that is sure to impress your guests.
