1 (8 ounce) package cream cheese
1/2 cup goat cheese
1/2 cup bacon, chopped
1/2 cup feta cheese
1 cup cooked chopped shrimp
1 cup breadcrumbs
1 (15 ounce) jar Ragú® Pasta Sauce (old world marinara sauce)
3 eggs
1/4 cup basil-garlic olive oil
3 cups pasta (I used angel hair)
1/2 cup arugula

Steps:

  • Bring enough water to a boil to cook pasta.
  • In large bowl, combine cream cheese, goat cheese, feta cheese, chopped shrimp, and chopped bacon. Foam into small balls.
  • Roll in bread crumbs.
  • In a small bowl, whisk eggs together.
  • Dip breaded balls into eggs and then back into the bread crumbs.
  • Using a large skillet, heat the basil-garlic oil and then place breaded balls into skillet and cook on medium to low heat turning often until golden all around.
  • Once pasta in fully cooked, drain and then add warm Old World Ragu Sauce to the pasta and place breaded balls on top of the sauce. Top with fresh arugula and enjoy!

10 to 12 ounces medium shrimp in the shell, washed
2 tablespoons olive oil

1 bunch green onions, trimmed and thinly sliced on the diagonal
4 garlic cloves, thinly sliced
Juice of 2 limes

Steps:

  • In a medium saucepan, stir the grits and salt into the boiling water. Reduce the heat and simmer, covered, for about 10 minutes, stirring occasionally. Remove from the heat and pout into a buttered 8x8-inch dish. Let cool until firm. Remove from the dish and cut into quarters.
  • Fry the bacon in a large heavy skillet over medium heat. With slotted spoon, remove the bacon and drain on paper towels, reserving the fat in the pan.
  • In the same skillet, sear the quartered grits over high heat until golden on both sides. With a spatula, transfer to a platter.
  • Combine the salt, pepper, cumin, paprika, and cayenne in a bowl. Add the shrimp and toss to coat evenly.

1/4 cup heavy cream

2 bunches mustard greens, cleaned, thick stems discarded
Pinch red chile flakes
1/4 cup chicken stock
1 1/2 tablespoons unsalted butter, divided
2 (21/25) count shrimp, peeled, deveined, and rinsed

2 tablespoons white wine
2 to 3 tablespoons Romesco Sauce, recipe follows
1/4 cup blanched, slivered almonds
1 slice rustic white bread, diced into 1/2-inch cubes
1 teaspoon white balsamic vinegar
4 Roma tomatoes, cored and quartered
1/4 cup jarred roasted red peppers
1 clove garlic, minced
1 teaspoon paprika
2 tablespoons olive oil

Steps:

  • For the grits: Place a saucepan over high heat with the chicken stock, salt, and pepper. Bring to a boil, reduce the heat to medium-low, add the grits, and stir with a whisk. Once the grits come to a simmer, add the cream, again reduce the heat to low, and continue to cook until the grits just start to thicken, about 8 minutes.   • For the shrimp: Heat a saute pan over medium heat and add 1 tablespoon butter, allowing the butter to melt.
  • Season the shrimp with salt and pepper and then add to the pan. Stir the shrimp while cooking. Cook until bright red, 3 to 4 minutes.
  • Once the shrimp are cooked, add the wine to deglaze the pan, allowing the wine to simmer for 1 minute until reduced.
  • Turn the heat off and add 2 to 3 tablespoons Romesco sauce, stirring in to coat the shrimp. Add the remaining 1/2 tablespoon butter to finish.
  • To plate, spoon the grits onto a plate, top with mustard greens, and top with shrimp.
  • Grind the almonds in a food processor until finely ground but not pureed. Add the bread, vinegar, tomatoes, peppers, garlic, and paprika to the processor and grind together briefly until evenly pureed. With the motor running, add the olive oil slowly until the sauce is thickened. Taste and season with salt.

¾ cup quick-cooking grits
½ teaspoon salt
1 cup shredded Cheddar cheese

½ cup diced green bell pepper
½ cup diced onion
1 tablespoon shredded Cheddar cheese, or as desired

Steps:

  • Bring chicken broth and evaporated milk to a boil in a large saucepan; stir in grits and salt and return to a boil. Reduce heat to low, cover, and simmer grits until thick, stirring often, about 5 minutes. Stir in 1 cup Cheddar cheese until melted. Set grits aside and keep warm.

5 tablespoons polenta
8 slices bacon
4 ounces frozen salad shrimp, thawed
2 large eggs
2/3 cup panko breadcrumbs
6 tablespoons all-purpose flour (add more if necessary)
2 tablespoons grated parmesan cheese
canola oil (for frying)

Steps:

  • In a saucepan, put alfredo and polenta. Turn on the heat to medium and cook stirring constantly. When it starts to boil, reduce heat to medium-low and keep cooking stirring constantly until thickened. Let cool to room temperature.
  • In the meantime, cook bacon in a large no-stick skillet over medium heat until crisp. Drain on paper towels and chop bacons into small pieces.
  • When the alfredo mixture has cooled enough to handle, put shrimp and bacons into the saucepan and mix to combine.
  • In a shallow bowl, put all-purpose flour. In another shallow bowl, beat eggs. In a shallow plate, mix together panko and parmesan cheese.
  • Take about tablespoonsful of alfredo mixture and form into a ball. Coat each ball with all-purpose flour, dip in eggs and coat with panko mixture. (if it is very soft, use a spoon so that the ball doesn't fall apart) Repeat this until the alfredo mixture is gone.
  • Work in several bathes. Heat enough canola oil to fry all balls in a fry pan or work and deep fry until golden brown. Drain on paper towels.

1 cup tillamook monterey jack cheese, broken into chunks
1 cup tillamook vintage white extra-sharp cheddar cheese, broken into chunks
2 1/2 tablespoons tillamook unsalted butter
1 1/2 teaspoons brandy or 1 1/2 teaspoons cognac
1 tablespoon finely minced celery
1 pinch cayenne
1/4 cup fine dry breadcrumb
1 tablespoon minced parsley

  • Heat oil in a small frying pan over medium heat. Add shallots and salt and sauté until soft. Set aside to cool.
