PANNU KAKKU (FINNISH OVEN PANCAKE)
An eggy, buttery, oven pancake. This looks so good, I can't wait to try it. Putting the recipe hear for safe keeping. I got it off Erin's kitchen blog. Hope she doesn't mind. Update: Finally got to make this deliciously ooey, gooey pancake. I also added a dash of vanilla and would also recomend decreasing the butter to about 6 tbs from 8. I also preheated the oven to 400 degrees to melt the butter and then decreased the temp to 350 when I put the batter in. Oh so yummy! I will update the ingredients below so that the nutritional information is correct.

PANNAUKKAU (FINNISH OR SWEDISH PANCAKE)
This is a fantastic way to serve a pancake-like breakfast for a crowd. Quick and easy to prepare, as it bakes this pancake fluffs like a big puff and then deflates. The top and bottom are slightly crisp and holds in a creamy pancake-like filling. The center is almost like a baked custard but a little more sturdy. Top with fresh fruit and homemade whipped cream for a wonderful breakfast. Simple ingredients produce amazing flavor in this pancake recipe.

PANNUKAKKU
Unlike most pancakes, this cardamom-scented version hailing from Finland is baked rather than fried or grilled, giving it a soft, puffed-up interior and a delicately crisp crust.

Steps:
- Preheat oven to 425 degrees. Whisk together flour, salt, cardamom seeds, sugar, milk, 1/4 cup water, and the eggs in a large bowl. Let stand, covered, 20 minutes.
- Heat a 12-inch cast-iron skillet in oven 10 minutes. Melt butter in skillet. Pour in batter; bake until puffed, about 25 minutes. Cut into wedges; serve with jam.
Tips:
- Use a non-stick pan. This will help prevent the pancakes from sticking and make them easier to flip.
- Heat the pan over medium heat. If the pan is too hot, the pancakes will burn. If the pan is too cold, the pancakes will not cook evenly.
- Use a small amount of batter for each pancake. This will help the pancakes cook quickly and evenly.
- Do not flip the pancakes too early. Wait until the edges of the pancakes are slightly browned and bubbles begin to form on the surface.
- Serve the pancakes immediately. Pannaukkau pancakes are best enjoyed hot and fresh.
Conclusion:
Pannaukkau pancakes are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be customized with a variety of toppings. Whether you like them simple with butter and syrup or loaded with fruit and whipped cream, pannaukkau pancakes are sure to please everyone at the table.
