1 3/4 pounds boiling potatoes
2 garlic cloves, minced
7 cups water
2 cups 1/2-inch cubes Italian bread, toasted lightly
4 teaspoons extra-virgin olive oil
1/4 cup freshly grated Parmesan
1 pound broccoli, coarse stems discarded, cut into 1-inch flowerets and remaining stems peeled and sliced thin

Steps:

  • Peel potatoes and cut into 1-inch pieces. In a 4-quart saucepan boil potatoes, garlic, and water, skimming froth, until potatoes, are very tender, about 15 minutes.
  • Set broiler rack about 1 inch from heat and preheat broiler.
  • While potatoes are boiling, in a bowl sprinkle bread with oil and salt to taste and toss. On a baking sheet arrange bread in one layer as close together as possible and sprinkle with half of Parmesan. Broil bread until Parmesan is melted, about 1 minute.
  • Transfer potatoes with a slotted spoon to a bowl, reserving cooking liquid in pan, and with a potato masher mash coarse. Stir potatoes and broccoli into reserved cooking liquid and simmer, partially covered, stirring occasionally, until broccoli is tender, about 5 minutes. Stir in remaining Parmesan and salt and pepper to taste.
  • Serve soup with croutons.

1 tablespoon extra virgin olive oil
1 medium onion, chopped
2 celery ribs, chopped
3 cloves garlic, minced
3 medium zucchini, scrubbed but kept unpeeled,cut into 1/2 inch cubes
1 medium potato, peeled and cut into 1/2 inch cubes (1 cup)
3 cups chicken broth or 3 cups low sodium chicken broth
1 sprig fresh thyme
1 cup evaporated skim milk
3 tablespoons freshly grated parmesan cheese
salt and pepper

Steps:

  • Heat oil in a large pot over medium heat, add the onion, celery and garlic, and cover.
  • Cook stirring often, until the onions are translucent, about 5 minutes.
  • Stir in zucchini and potato.
  • Add enough broth to barely cover the vegetables.
  • Add the thyme and bring to a boil over high heat.
  • Reduce heat to low.
  • Simmer, partially covered, until the potatoes are tender about 15 minutes.

6 medium potatoes, peeled and chopped in large chunks as for mashed potatoes
1/2 cup onion, chopped
6 tablespoons butter
3 ounces cream cheese
2 cups milk (approximately depending on type of potato and time cooked)
2 garlic cloves, minced
1/4 teaspoon pepper
1 teaspoon salt
1 cup parmesan cheese, grated
fresh parsley or 1 tablespoon dried parsley

  • Add potatoes and onions to boiling water.

1 large onion, chopped
2 leeks, white and light green parts only, sliced and cleaned (optional)
3 garlic cloves, chopped, plus 1 small clove, cut in half
Salt, preferably kosher salt, to taste
2 pounds starchy potatoes (russets or Yukon golds), peeled and cut in large dice
A bouquet garni made with a bay leaf and 2 sprigs each parsley and thyme
2 quarts water, chicken stock, or vegetable stock
1 pound broccoli crowns, coarsely chopped
Freshly ground pepper to taste
12 thin slices baguette or country bread
1/4 cup freshly grated Parmesan

Steps:

  • Heat the olive oil in a large, heavy soup pot over medium heat and add the onion and optional leeks. Cook, stirring, until tender, about 5 minutes. Add 1/2 teaspoon salt and the chopped garlic and cook, stirring, for another minute, until fragrant. Add the potatoes, bouquet garni, water, and salt to taste.   • Lightly toast the bread and rub with a cut clove of garlic. Top each slice with a spoonful of Parmesan and heat through in a toaster oven or under a broiler, being careful to watch closely, until the cheese melts. Serve the soup, topping each bowl with 2 croutons.

1/8 tsp rubbed sage
1/3 c all-purpose flour
2 c heavy whipping cream, divided
1 c grated parmesan cheese, divided
8 bacon strips, cooked and crumbled
2 Tbsp minced fresh cilantro

  • 1. In a 5- or 6-qt. Slow cooker, combine the first nine ingredients. Cover and cook on low for 5-6 hours or until vegetables are tender.
