2 lbs acorn squash, halved, seeded and sliced 3/4 inch thick (can also use delicata squash)
2 tablespoons olive oil
8 sprigs fresh thyme
kosher salt
fresh ground black pepper
1/4 cup grated parmesan cheese (1 ounce)

### Tips
  • Choose the right squash: Look for acorn squash that are firm and heavy for their size, with deep green skin and no blemishes.
  • Roast the squash at a high temperature: This will help to caramelize the natural sugars in the squash and give it a slightly crispy exterior.
  • Toss the squash with olive oil and seasonings before roasting: This will help to prevent the squash from drying out and add flavor.
  • Roast the squash until it is tender: The squash should be easily pierced with a fork when it is done.
  • Serve the squash immediately: Roasted acorn squash is best enjoyed fresh out of the oven.
### Conclusion Roasted acorn squash is a delicious and versatile dish that can be enjoyed as a side dish, main course, or even dessert. It is a good source of vitamins, minerals, and fiber, and it is also a low-calorie food. With its sweet and nutty flavor, roasted acorn squash is a sure-fire hit with people of all ages.
