PEARL BARLEY CASSEROLE
This is a very tasty way to serve a very healthy grain that is often overlooked. I never use the mushrooms as I don't care for them and often add chopped carrots, red pepper, or grated zucchini.

Tips:
- Use fresh parsley: Fresh parsley is is crucial for the best flavor and aroma in this casserole. If you don't have fresh parsley, you can substitute 1 tablespoon of dried parsley, but the flavor will be less intense.
- Don't overcook the rice: The rice should be cooked through but still slightly firm. If you overcook the rice, it will become mushy and the casserole will be less appealing.
- Use a good quality cheese: The cheese is one of the main ingredients in this casserole, so it's important to use a good quality cheese that melts well. Cheddar cheese is a classic choice, but you can also use mozzarella, Monterey Jack, or a blend of cheeses.
- Add some vegetables: This casserole is a great way to sneak in some extra vegetables. You can add chopped carrots, celery, onion, or bell peppers.
- Make it ahead of time: This casserole can be made ahead of time, which makes it a great option for busy weeknights. Simply assemble the casserole and refrigerate it for up to 24 hours before baking.
Conclusion:
Parsley rice casserole is a classic comfort food dish that is easy to make and always a hit with the family. With its creamy, cheesy sauce, tender rice, and flavorful parsley, this casserole is sure to be a favorite. So next time you're looking for a quick and easy weeknight meal, give parsley rice casserole a try.
