Yield Makes 24

Number Of Ingredients 9

1 medium parsnip (about 9 ounces, preferably 2-3" wide), peeled
1/4 cup low-sodium soy sauce or tamari
1 teaspoon smoked paprika
5 tablespoons vegetable oil, divided
3 1/2 ounces blue cheese (about 2/3 cup)
24 large pitted dates, preferably Medjool
24 smoked almonds
Special Equipment
24 wooden toothpicks, soaked in water

Steps:

  • Place a rack in middle of oven; preheat to 450°F. Very thinly slice parsnip with a vegetable peeler to create wide, long ribbons.
  • Whisk soy sauce, paprika, and 1/4 cup oil in a medium bowl. Add parsnip ribbons, toss to combine, and let sit 10 minutes.
  • Meanwhile, stuff heaping 1/2-teaspoonfuls of cheese into each date. Place 1 almond in the center of each. Wrap parsnip ribbons around each date, using 2 ribbons if necessary to cover middle section of date; reserve soy sauce mixture. Secure ribbons with a toothpick. Arrange dates on a parchment-lined rimmed baking sheet.
  • Bake 5 minutes, then remove toothpicks and brush with soy sauce mixture. Continue to bake until parsnip ribbons are browned and slightly crisped, about 3 minutes more. Serve immediately.

  • Dates can be assembled 1 day ahead; cover and chill. Bring to room temperature before baking.

Time 2h40m

Yield 20 dates

Number Of Ingredients 4

20 pitted Deglet Noor dates
1 cup dry sherry
2 ounces blue cheese
7 slices bacon (not thick-cut), cut into 3-inch lengths

Steps:

  • Soak the dates in the sherry for 2 hours, making sure they're fully submerged.

  • Heat a toaster oven to 450 degrees F and place a rack in a quarter sheet pan or use the pan that came with your toaster oven, if applicable (see Cook's Note).

  • Pipe roughly 1/2 teaspoon of the cheese into each date, then wrap with a piece of bacon. Place the wrapped dates on the rack, bacon ends down, and gently press to anchor.
  • Bake until the bacon is brown and crispy, about 15 minutes. Cool for 5 minutes before serving.

Tips:

  • Choose the right parsnips: Look for parsnips that are firm and smooth, with no blemishes or bruises. The thinner the parsnips, the easier they will be to wrap.
  • Peel the parsnips thinly: Use a vegetable peeler to remove the outer layer of the parsnips. Be careful not to peel too deeply, as this will make the parsnips difficult to wrap.
  • Soak the parsnips in cold water: This will help to remove any starch from the parsnips, which will make them less likely to stick together.
  • Cook the parsnips until they are tender: You can boil, roast, or steam the parsnips. Boiling is the quickest method, but roasting or steaming will give the parsnips a more flavorful taste.
  • Wrap the parsnips around the dates: Once the parsnips are cooked, wrap them around the dates. You can use a toothpick to secure the parsnips in place.
  • Fry or bake the parsnip-wrapped dates: You can either fry or bake the parsnip-wrapped dates. Frying will give them a crispy outer layer, while baking will give them a softer texture.

Conclusion:

Parsnip-wrapped devils on horseback are a delicious and easy-to-make appetizer. They are perfect for parties or potlucks. With their sweet and savory flavor, they are sure to be a hit with your guests. So next time you are looking for a unique and tasty appetizer, give parsnip-wrapped devils on horseback a try.
