1/3 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1 shallot, minced
1 small clove garlic, minced
Kosher salt and freshly ground pepper

2 pounds mixed heirloom tomatoes, cored, seeded and cut into 1/2-inch pieces
1 pound pasta, such as campanelle, penne or fusilli
12 ounces fresh mozzarella cheese, cut into 1/2-inch pieces
1/2 cup chopped fresh basil
1/2 teaspoon grated lemon zest

Steps:

  • Whisk the olive oil, lemon juice, shallot and garlic in a large bowl. Season with salt and pepper. Add sugar, if desired (depending on the sweetness of your tomatoes). Add the tomatoes and gently toss. Marinate at room temperature, about 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain in a colander and run under cold water to stop the cooking.
  • Add the pasta and mozzarella to the tomato mixture and toss. Stir in the basil and lemon zest, and season with salt and pepper. Refrigerate, tossing occasionally, until serving.

1 1/2 pounds ripe tomatoes, cored, seeded, and cut into 1/2-inch dice
12 ounces fresh mozzarella cheese, cut into 1/2-inch cubes (see note above)
1 poundpenne pasta or other short tubular or curly pasta such as fusilli or campanelle
1/4 cup chopped fresh basil
1 teaspoon sugar (see note above)

Steps:

  • 1. Whisk oil, 2 teaspoons lemon juice, garlic, shallot, 1/2 teaspoon salt, and 1/4 teaspoon pepper together in large bowl. Add tomatoes and gently toss to combine; set aside. Do not marinate tomatoes for longer than 45 minutes. 2. While tomatoes are marinating, place mozzarella on plate and freeze until slightly firm, about 10 minutes. Bring 4 quarts water to rolling boil in stockpot. Add 1 tablespoon salt and pasta, stir to separate, and cook until al dente. Drain well. 3. Add pasta and mozzarella to tomato mixture and gently toss to combine. Let stand 5 minutes. Stir in basil; adjust seasonings with salt, pepper, and additional lemon juice or sugar, if desired, and serve immediately.

1 pound spaghetti
2 tomatoes, diced
1 pound mozzarella ball, cubed
1/2 cup extra-virgin olive oil
1 teaspoon fresh oregano
4 fresh basil leaves

Steps:

  • Cook the spaghetti in salted boiling water until al dente, about 6 minutes. While the spaghetti is cooking, begin to make the sauce. Mix the tomatoes and mozzarella in a large bowl. Add the best available extra-virgin olive oil, oregano, basil leaves, and salt, to taste.
  • When the spaghetti is ready, remove it from the water and add it to the bowl with approximately 1/2 cup of pasta water. Mix well, and serve immediately.

1 1/2 cups (63%) bittersweet chocolate chips
2 sticks (1 cup) unsalted butter, plus more for the pan
5 large eggs, separated
1/4 teaspoon kosher salt
1 cup granulated sugar
1 1/2 cups almond flour
1 teaspoon pure vanilla extract
Confectioners' sugar, for dusting

Steps:

  • Place the chocolate and butter in the top of a double boiler and melt until smooth. Cool slightly, until just warm to the touch.
  • Preheat the oven to 350 degrees F. Butter the inside of a 9-inch springform pan.
  • Place the egg whites in a medium bowl with the salt. Place the yolks in a slightly larger bowl with the granulated sugar. Using a handheld mixer, beat the whites on medium speed until stiff peaks form, about 2 minutes. Then beat the egg yolks on medium speed until light, pale and fluffy, about 1 1/2 minutes. Using a rubber spatula, stir the chocolate mixture, almond flour and vanilla into the yolks. In 2 batches, fold the whipped whites into the chocolate base. Pour the mixture into the prepared pan and bake until puffed and beginning to crack on top, about 40 minutes. Cool completely on a wire rack.
  • When cool, run a thin knife around the edge of the pan to release the cake. Remove the outside ring and dust the top with confectioners' sugar.

1 pound whole-wheat spaghetti
4 cups water

1/4 teaspoon red pepper flakes

1 teaspoon olive oil
1/2 cup packed fresh basil leaves, plus more for garnish, roughly torn
1 cup shredded mozzarella

Shaved Parmesan cheese, optional

Steps:

3/4 cup olive oil
1/4 cup balsamic vinegar
4 cloves garlic, minced
1/4 cup chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon fresh ground black pepper
1 lb plum tomato, chopped
1/2 lb fresh mozzarella cheese, cut into 1/2 inch chunks
1 (16 ounce) package wagon wheel macaroni or 1 (16 ounce) package pasta, of your choice

Steps:

  • In a large bowl, combine oil, vinegar, garlic, basil, salt, red pepper and black pepper; add tomatoes and mozzarella and toss until well coated; let mixture marinate at room temperature at least 30 minutes.
  • Cook pasta per package directions; drain; place in a large bowl and add the tomato mixture; toss until well combined, allowing the cheese to melt slightly.

¾ cup onion, chopped
1 cup marinara sauce
⅓ cup fresh basil, chopped
1 teaspoon salt
1 teaspoon pepper
mozzarella cheese, optional

Steps:

  • Preheat oven to 400ºF (200ºC).
  • Take two sheets of aluminum foil (about 12x12-inch, 30x30 cm) and stack them on top of each other.
  • Fold one side of the foil about ⅓ of the way across sheet, repeat for opposite side.
  • Pinch the corner to form a point and then flatten it to the short side of the foil, forming a raised corner. Repeat for all four sides, and make four of these.
  • Add all of the ingredients to one of the foil boats, then stir.
  • Bake for 12 minutes.
  • Allow to cool for 10 minutes.
  • Eat or pack into tupperware and refrigerate 3-5 days.

1 teaspoon garlic salt
1 cup shredded Mozzarella cheese
1 cup Fresh sliced Mozzarella cheese
1 Tablespoon balsamic vinegar
1 Tablespoon olive oil

Steps:

  • Preheat oven to 375 degrees F.
  • Bring 4 cups of water to a boil. Add noodles and boil for 5 minutes, then run under cold water to stop additional cooking.
  • In a bowl, combine cooked noodles, chicken, tomatoes, basil, 1 cup chicken broth, garlic, powder, garlic salt, and shredded mozzarella cheese.
  • Pour remaining 1/4 cup chicken broth in the bottom of a 9 x 13 inch pan.
