½ cup extra-virgin olive oil
4 garlic scapes, tops trimmed and stems finely chopped
3 tablespoons chopped fresh parsley
salt and ground black pepper to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in spaghetti and return to a boil. Cook uncovered, stirring occasionally, until tender yet firm to the bite, 9 to 11 minutes. Drain.

3 ½ cups chopped poached chicken breast meat
½ cup diced celery
1 cup seedless green grapes, halved
salt to taste

2 tablespoons rice vinegar
1 tablespoon white sugar

Steps:

1 pound linguine or spaghetti
5 tablespoons olive oil
4 garlic cloves, thinly sliced
1/2 teaspoon crushed red-pepper flakes
1 pound bay or sea scallops, tough muscles removed
1 pint container ripe grape tomatoes
Freshly ground black pepper
2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish
1 tablespoon unsalted butter

Steps:

  • Bring a large stockpot of water to a boil, and add salt generously. Add pasta; cook until al dente according to package instructions. Drain in a colander, reserving 1/4 cup cooking water.
  • Heat the oil in a large saute pan over medium-high heat. Add garlic and red-pepper flakes; toast until lightly golden and fragrant, about 1 minute. Transfer garlic to a small bowl; set aside
  • Add scallops to pan (if using sea scallops, cut in half); saute until opaque, about 2 minutes. Add the tomatoes, and cook, stirring frequently, until the skins begin to split, 2 to 3 minutes; crush a few with the back of the spoon. Season with salt and pepper. Remove from heat.
  • Add pasta, parsley, reserved cooking water, and butter; toss to combine. Divide among bowls, and serve immediately; garnish with reserved garlic and parsley.

1 can (15 ounces) chickpeas, rinsed and drained
1 pint grape or cherry tomatoes, halved
1/2 pint (8 ounces) bocconcini (small fresh mozzarella balls), halved, or 8 ounces fresh mozzarella, cubed
2 tablespoons fresh thyme leaves, plus more for garnish
2 tablespoons olive oil
1 tablespoon white-wine vinegar

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/2 cup pasta water. Add chickpeas to pot; immediately drain pasta mixture, and return to pot.
  • Add tomatoes, bocconcini, thyme, oil, and vinegar to pasta. Toss, adding reserved pasta water a little at a time to create a thin sauce that coats penne (you may not need all the water). Season with salt and pepper; toss to combine. Serve, garnished with additional thyme.

Plan ahead this salad needs to chill for a minimum of 8 hours or 24 hours. Please adjust all amounts to suit taste, if you are a dill-lover then increase the amount, this can easily be doubled, I sometimes add in 1/4 cup grated Parmesan cheese into the dressing but that is optional ;-)

2 cups cooked chicken (cubed)
2 green onions, chopped
1 stalk celery, diced

1 small red onion, halved and thinly sliced
2 cloves garlic, chopped

2 cups seedless red grapes
1 cup low-sodium chicken broth
1/4 teaspoon red pepper flakes (or more to taste)
10 ounces whole-wheat orecchiette (or other short-cut pasta, such as farfalle or penne)
2 tablespoon grated Parmesan
1/4 cup chopped fresh parsley (or 1/2 cup chopped fresh basil)
