Yield Makes one 11-to 12-inch or two 8-to 9-inch or two 4-by-14-inch crusts

Number Of Ingredients 5

2 1/2 cups all-purpose flour
3 tablespoons sugar
1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
2 large egg yolks
1/4 cup ice water

Steps:

  • In the bowl of a food processor, combine flour and sugar. Add butter, and process until mixture resembles coarse meal, 10 to 20 seconds.
  • In a small bowl, lightly beat egg yolks; add ice water. With machine running, add the egg mixture in a slow, steady stream through the feed tube. Pulse until dough holds together without being wet or sticky; be careful not to process more than 30 seconds. To test, squeeze a small amount together: If it is crumbly, add more ice water, 1 tablespoon at a time.
  • Divide dough into two equal balls. Flatten each ball into a disk, and wrap in plastic. Transfer to the refrigerator, and chill at least 1 hour.

Categories     Dessert     Pies     Pie

Time 3h38m

Number Of Ingredients 6

3 cups / 340 grams all-purpose flour
1/2 cup / 100 grams granulated sugar
1 teaspoon salt
1 cup / 220 grams unsalted butter (cold, cut into bits)
2 egg yolks
1 to 4 tablespoons ice water (as needed)

Steps:

  • Gather the ingredients.
  • In a bowl, blend together the flour, sugar, and salt.
  • Cut in the cold butter with a pastry cutter or fork until the mixture resembles a coarse meal with bits of butter no larger than peas. (Alternatively, you can process the mixture on pulse mode in a food processor .)
  • Add the egg yolks and continue blending with the pastry cutter (or pulse in the processor) until the eggs are evenly incorporated and the mixture resembles a fine meal.
  • Stir in the ice water with a fork, 1 tablespoon at a time, until the mixture is just moistened enough to gather and mold into a smooth ball. (Or, with the food processor running, add the water 1 tablespoon at a time just until the mixture forms a dough.)
  • Divide the dough in half and flatten each portion into a smooth disc. Wrap with plastic and chill in the fridge for at least 2 hours, or overnight if you prefer.
  • Remove the chilled dough from the fridge and allow to rest at room temperature for 15 to 30 minutes.
  • Remove the plastic wrap and, on a lightly floured surface, roll out the dough to fit in the tart pan . Lift and turn the dough as you work, keeping the work surface dusted with flour to prevent sticking.
  • Lay the dough in the tart pan and press it firmly against the sides and bottom without stretching it.
  • Trim off any excess dough.
  • Cover and chill the dough in the pan for at least 30 minutes before filling and baking.
  • To pre-bake the empty tart shell, prick the dough all over with a fork. Cover lightly with foil and bake at 375 F / 190 C for 15 minutes.
  • Remove the foil, and continue baking until barely colored for a partially baked shell or golden brown for a fully baked shell.
  • Use in your favorite tart recipe and enjoy!

PâTE SUCRéE (SWEET TART DOUGH)

Pâte Sucrée (Sweet Tart Dough) image

A pâte sucrée is a crisp yet tender pastry crust that is slightly sweet. It maintains its shortbread-like texture when chilled, which makes it ideal for tarts that require refrigeration.

Provided by Jennifer Segal

Categories     Desserts

Time 45m

Yield One fully baked 10-inch tart shell or 9-inch pie shell

Number Of Ingredients 6

1 stick (½ cup) unsalted butter, at room temperature
⅓ cup sugar
¼ teaspoon salt
1¼ cups all-purpose flour, spooned into measuring cup and leveled-off
1 egg yolk
Nonstick cooking spray with flour, for baking

Steps:

  • In a stand mixer fitted with a paddle attachment, cream the butter, sugar, and salt on medium speed until pale and creamy, about 2 minutes. Scrape down the sides and bottom of the bowl with a rubber spatula. Add the flour and mix on low speed for about 30 seconds, until the flour is incorporated. The mixture will look like wet, clumpy sand. Add the egg yolk and mix on low speed until the yolk is evenly incorporated and the dough is clumpy, about 30 seconds. Using your hand, lightly knead the dough into a ball inside the bowl. Remove the dough from the bowl, press it into a 6-inch disk, wrap it tightly in plastic wrap, and let it rest in the refrigerator for about 30 minutes. (The dough can be tightly wrapped in plastic and stored in the refrigerator for up to 5 days or in the freezer for up to 3 months. If frozen, thaw it in the refrigerator overnight before using.)
  • Lightly spray a 10-inch tart pan with a removable bottom or a 9-inch pie shell with nonstick cooking spray with flour. Place the chilled dough inside the pan. Pinch off pieces of dough and press them against the sides of the pan to reach just shy of a ¼ inch thick and about ⅛ inch above the rim (you'll trim the top later). Using the heel of your hand, press the rest of the dough evenly into the bottom of the pan. (It will look like a mess, and it may seem like you won't have enough dough at first, but have faith, it will come together.) Be sure there are no seams in the dough, and press it squarely along the corners where the bottom meets the sides to avoid extra-thick edges. Use a paring knife to trim the top edge of the dough so it is even with the rim of the pan. Cover with plastic wrap and place in the freezer for at least 30 minutes to chill.
  • Preheat the oven to 350°F and set an oven rack in the middle position.
  • Place the chilled pâte sucrée on a baking sheet (for easy handling) and bake for 23 to 26 minutes, or until lightly golden. Let cool to room temperature on a wire rack.

PâTE SUCRéE - FRENCH SWEET TART CRUST (PASTRY DOUGH)

Pâte Sucrée - French Sweet Tart Crust (pastry dough) image

Recipe video above. If I only had room for one Sweet Tart Crust recipe in my life, this would be it. Called Pâte Sucrée in French, it's an excellent master pastry for all sweet tarts, such as the Pistachio Pear Tart recipe I shared today.Buttery and not too sweet, flaky but not so crumbly that makes it difficult to eat with a fork. Plus, the dough is extremely easy to work with - easier than Shortcrust Pastry.Makes enough pastry for a tart tin up to around 24 x 3 cm / 9.5 x 1.2" big.

Provided by Nagi

Categories     Sweet Baking

Number Of Ingredients 6

1 1/2 cups flour (, plain/all purpose)
6 1/2 tbsp soft icing sugar / powdered sugar (, sifted (Note 1))
2 1/2 tbsp almond meal / ground almonds ((Note 2))
1/4 tsp salt
100g / 7 tbsp butter (, unsalted, softened, cut into 1cm cubes)
1 large egg (, at room temperature (55-60g/2 oz) (Note 3))

Steps:

  • Mix Dy Ingredients: Whisk together flour, icing sugar, salt and almond meal in a bowl.
  • Add butter: Use your fingertips to rub the butter into the dry ingredients until it resembles breadcrumbs. (Note 4).
  • Add egg: Mix with a rubber spatula until it becomes too hard to stir anymore, then use your hands to bring it together into a dough.
  • Bring dough together: Turn dough out onto a work surface, then knead to bring together into a smooth ball. Flatten into a 2cm / 0.8" thick disc. Wrap with cling wrap and refrigerate for 30 minutes.
  • Unwrap chilled dough. Place on a lightly floured work surface.
  • Roll out into a 32cm / 13" round (3mm / 1/8" thick).
  • Line tart tin: Roll pastry lightly on to a rolling pin (ie. so it wraps around itself). Then unroll it gently over the tart tin.
  • Fit pastry: Adjust the pastry to fit into the tart tin, fitting into the corner, taking care not to stretch it (causes shrinkage during bake).
  • Trim excess dough: Roll the rolling pin over tart tin to trim excess dough. Pictured tart tin is 24 x 3 cm / 9.5 x 1.2" - you can use any up to this size.
  • Prick the base of the pastry 30 times with a fork. Not all the way through - just make a light prick on the surface.
  • Chill pastry in tart tin for 30 minutes.
  • Preheat oven to 200°C / 390°F (180°C fan).
  • Baking beads: Cover pastry with 2 sheets of baking paper (parchment paper), in a "X" arrangement. Fill with baking beads (or 2 cups dry raw rice or beans).
  • Baking times for a Par Baked Tart to be used for tarts that are baked for > 30 minutes once the filling is added into the cooked tart shell.
  • Bake 15 minutes the remove from oven. Use excess paper to remove baking beads.
  • Bake uncovered 5 minutes: Return tart crust to oven for 5 minutes. Pastry should be light golden, crispy on surface, but slighty undercooked inside (will finish cooking once filled and baked again).
  • Use these baking times if the tart shell is to be used for raw fillings (ie tart not baked once crust is filled) OR fillings that are baked for < 25 minutes.
  • Bake 15 minutes the remove from oven. Use excess paper to remove baking beads.
  • Bake uncovered 10 minutes: This will fully cook the pastry through and give it nice colour which we need as the pastry won't cook through in less than 25 minutes once filled.
  • Cool: Remove then cool in tart tin before filling (this ensures crust stays crispy once filled), then baking again if filling needs to be cooked (like this Pistachio Frangipane Pear Tart).
  • Make ahead up to 3 days, suitable for baking once filled.

PLUM TART

Plum Tart image

A plum tart is very summery with beautiful ripe plums on top of an almond filling and a classic pâte sucrée crust. It's a perfect dessert for entertaining.

Provided by Sebastien Rouxel

Categories     dessert

Time 3h30m

Yield 8 servings

Number Of Ingredients 12

1/2 cup unsalted butter
1/2 cup powdered sugar
1/4 cup almond flour
1 1/2 cups all-purpose flour
1 large egg
1 vanilla bean, divided
1/3 cup Unsalted butter, room temp.
2/3 cup Powdered sugar
1 large egg
3/4 cup almond flour
1 teaspoon all-purpose flour
10 Ripe plums

Steps:

  • For the pâte sucrée: Place butter and powdered sugar into the bowl of a stand mixer fitted with a paddle attachment. Beat on low/medium speed soft and creamy, 1-2 minutes. Add the almond flour followed by the all-purpose flour and mix for another 1-2 minutes. Crack the egg into a bowl then add to the dough and mix for 30 seconds (dough may look "broken" which is okay). Cut 1/4 of the the vanilla bean in half and scrape the seeds into the mixture and continue beating for 30 for seconds to distribute the beans. Transfer dough to a work surface and shape into a 4 by 6 rectangle, ¾-inch thick. Wrap in plastic and chill 1-1 ½ hours until firm.
  • Pre-heat oven to 350 degrees F.Line a sheet pan with parchment paper. Roll out the dough on a lightly floured surface and place into a 8 ¾-inch tart ring (note: there will be extra dough which you can roll out for a smaller tart). Freeze for 30 minutes.
  • For the almond cream: Place butter and powdered sugar into the bowl of a stand mixer fitted with a paddle attachment. Beat on low/medium speed until butter is soft and creamy. Split the remaining vanilla bean and add to the cream mixture. Crack the egg into a small bowl and add to the cream mixture. In another small bowl, mix both flours, then add to the almond cream and mix to combine. Transfer to a container and set aside.
  • For the tart: Spread the almond cream into the bottom of the tart shell. Cut plums into ⅛-inch wedges. Arrange a ring of plum slices, facing the same direction and each one overlapping the previous slice by about two-thirds, around the edge of the tart shell. Continue with a second ring that slightly overlaps the first. Arrange the remaining slices to fill the center of the tart. Add as many plums as you can because they will shrink when baking.Bake 1 hour until crust is browned, filling is set and plums are soft and juicy. Cool completely and serve.

PATE SUCREE

Pate Sucree image

Categories     dessert

Time 30m

Number Of Ingredients 10

1 cup all-purpose flour
2 tablespoons sugar
1/4 teaspoon kosher salt
6 1/2 tablespoons cold unsalted butter, cut into 1/2-inch pieces
2 1/2 tablespoons cold water
1 1/2 cups all-purpose flour
3 tablespoons sugar
1/4 teaspoon kosher salt
9 1/4 tablespoons cold unsalted butter, cut into 9 pieces
3 tablespoons plus 2 teaspoons cold water

Steps:

  • In a food processor, pulse to combine the flour, sugar and salt. Add the butter, and process until the mixture resembles coarse meal. With the machine running, pour in the water. Process until the mixture just begins to come together and form large clumps.
  • Remove the dough from the food processor, and place on a board. Shape dough into a disk about 4 inches in diameter (5 inches for a 10-inch crust). Wrap in plastic and refrigerate for 1 hour.
  • Place a rack in the middle of the oven, and heat to 425 degrees.
  • Remove the dough from the refrigerator, and unwrap. Roll it out to fit a 9-inch tart pan (or a 10-inch pan). Place the dough in the pan. Trim the excess dough, leaving 1/2inch to fold under so the rim is thicker than the rest of the crust. If using a pie plate or a tart pan with high edges, trim just below the edge and fold the edges under in the same manner. For the grapefruit tart, trim the edge to within 1/2 inch of the rim.
  • Prick the bottom of the crust with the tines of a fork. Cover the dough with a double thickness of aluminum foil. Fill the foil with rice, beans or pie weights.
  • To bake the crust partially, bake for 15 to 20 minutes, or until the dough is set. Remove from the oven. Remove weights and aluminum foil. To bake fully, bake for an additional 3 to 5 minutes, or until lightly golden. Remove from oven, and cool.

Tips:

  • Chilling your dough is essential. This will help prevent the dough from shrinking and cracking while baking.
  • To blind bake your tart crust, preheat your oven to 350°F (175°C) and line the tart crust with parchment paper. Fill the parchment paper with pie weights or dried beans, and bake for 15-20 minutes, or until the crust is golden brown.
  • When making the frangipane, be sure to use almond flour that is finely ground. This will help the frangipane have a smooth texture.
  • If you don't have a piping bag, you can use a ziplock bag with the corner snipped off to pipe the frangipane into the tart crust.
  • Be sure to brush the plums with melted apricot preserves before baking. This will help them caramelize and give them a beautiful shine.

Conclusion:

This plum tart is the perfect summer dessert. It's easy to make, and it's packed with fresh, juicy plums. The frangipane filling is rich and creamy, and the tart crust is buttery and flaky. This tart is sure to be a hit with your family and friends.
