PATRICK'S SEASONED BUTTER (FOR CORN-ON-THE-COB)

Patrick's Seasoned Butter (For Corn-On-The-Cob) image

This is my invention to make corn-on-the-cob even better than it already is. Use this seasoned butter with either boiled, microwaved, or grilled corn. Once you make up a pound, just wrap it in aluminum foil and keep it in the fridge until you need it. This stuff really is good. I always put out both the regular butter and this butter and guess what they always grab for seconds once they try it? A good item to have ready for the backyard summer cookout.

Time 30m

Yield 1 pound, 40 serving(s)

Number Of Ingredients 6

1 lb salted butter
1 teaspoon chili powder (chipotle-type)

1 tablespoon Italian salad dressing mix, powder (from a packet)
1/2 teaspoon crushed red pepper flakes

CORN WITH PASILLA BUTTER

Corn with Pasilla Butter image

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 1h40m

Yield 8 servings

Number Of Ingredients 3

8 sweet corn cobs, husks on
10 dried pasilla chile peppers
1 pound salted softened butter

Steps:

  • Soak the corn cobs in water, so the husks don't burn when you grill them. Minimum 1 hour but overnight is fine.
  • Preheat the oven to 250 degrees F.
  • To make the butter, put the pasilla chile peppers on a baking sheet and bake them until very brittle, about 15 minutes. When they are done, remove and cool them. Remove the seeds and crumble the chiles into a food processor. Add the butter and process until combined.
  • Lay out a sheet of plastic wrap on top of a sheet of foil. Turn the butter out onto the wrap and roll it into a cylinder. First wrap the plastic wrap around the cylinder and then secure the foil around it. Twist the ends, gradually applying more pressure as you twist, in order to make the cylinder taught. Alternatively, pile the butter into ramekins and cover with plastic wrap. Refrigerate it until firm.
  • Preheat a grill or grill pan to medium-high heat. Remove the corn from the water and shake or pat them dry. Grill the corn on the cob for 10 minutes, turning it every couple of minutes. Remove the corn cobs from the grill and pull the husks back on each one. Lay slices of the chilled pasilla butter on and let it melt. The corn will have beautiful flecks of chile. Or serve the ramekins on the dinner table for everyone to help themselves.

Tips:

  • Choose the Freshest Corn: Select corn with bright green husks that are tightly wrapped around the cob. The silks should be moist and slightly sticky.
  • Prepare the Corn Properly: Remove the husks and silks from the corn, leaving the cob intact. Rinse the corn under cold water to remove any dirt or debris.
  • Use High-Quality Ingredients: The quality of your ingredients will greatly impact the flavor of your seasoned butter. Use unsalted butter, fresh herbs, spices, and citrus zest to create a flavorful and aromatic butter.
  • Let the Butter Soften: Allow the butter to soften at room temperature for about 30 minutes before mixing it with other ingredients. This will make it easier to blend and spread.
  • Combine Flavors Harmoniously: Experiment with different herb and spice combinations to create a unique and flavorful seasoned butter. Some classic combinations include garlic and parsley, lemon and dill, or chili powder and cumin.
  • Use Fresh Herbs and Spices: Fresh herbs and spices provide the most vibrant flavor. If using dried herbs or spices, use about half the amount specified in the recipe.
  • Adjust Seasoning to Taste: Taste the seasoned butter before using it on your corn. Adjust the seasoning as needed, adding more herbs, spices, or salt and pepper to achieve your desired flavor.

Conclusion:

Elevate your corn on the cob experience with a variety of flavorful seasoned butters. Experiment with different herb, spice, and citrus combinations to create unique and delicious flavors. Whether you prefer a classic garlic and parsley butter or a more adventurous chili and lime butter, these seasoned butters will add an extra layer of flavor and richness to your corn. So next time you're grilling or boiling corn on the cob, don't forget to whip up a batch of seasoned butter to enhance its natural sweetness and create a truly unforgettable side dish.
