5 tablespoons amaretto
2 tablespoons brandy
6 ripe peaches, peeled if desired, pitted, cut into 1/2-inch-thick slices

1/2 stick unsalted butter, softened
1 cup coarsely crumbled amoretti
2 1/2 Tbsp. whole wheat flour
2 Tbsp. sugar
1/8 tsp. salt
1 large egg
8 firm, ripe small peaches, halved lengthwise and pitted
8 oz. mascarpone cheese

Steps:

  • Put oven rack in middle position and preheat oven to 350 degrees. Melt 2 Tbsp. butter and pour into a 13 x 19 inch glass or ceramic baking dish. Pulse 3/4 cup crumbled amoretti in a food processor until finely chopped, then add flour, sugar, salt, and remaining 2 Tbsp. butter. Blend until butter is incorporated, then add egg and blend until smooth.
  • Scoop out just enough peach pulp from center of each peach half with a melon ball cutter or small spoon to create a 1" deep cavity. Arrange peaches, cut sides up, in baking dish, then brush skins with melted butter from dish. Divide amaretti mixture among cavities, then sprinkle remaining 1/4 cup crumbled amoretti over filling. Bake until filling is puffed and crisp, 40 to 50 minutes. Serve warm or at room temp.
  • Wisk mascarpone with a few tablespoons of milk until it reaches a consistency suitable to dollop on peaches. Spoon on 1 Tbsp. per peach.

1 3/4 cups sugar
1/2 tsp. salt
2 cups half and half
1 T. vanilla
4 cups whipping cream
1 cup Amaretto liqueur
1 tsp. cinnamon
4 cups fresh peaches (half amount pureed, and half diced.)

Steps:

  • Scald milk until bubbles form around edges of pan. Remove from heat. Add sugar and salt until dissolved. Stir in half and half, vanilla, whipping cream, and 1/2 cup Amaretto. Cover and refrigerate 30 minutes. Add cinnamon to pureed peaches and diced peaches, then add to chilled mixture. Refrigerate another 15 minutes. Freeze in an ice-cream maker according to the manufacturer's directions. Drizzle remaining Amaretto liqueur over dished out servings.

1 (410g) can peach halves, in natural juice, drained
1 (425g) can creamed rice pudding
50g amaretto biscuits, lightly crushed
25g butter, softened
25g soft brown sugar
1 egg yoke
4 tbsp amaretto liquor
1/2 tsp vanilla extract

Steps:

  • Preheat the oven 180C/ 350F/Gas5.
  • Cream the butter and sugar in a bowl with wooden spoon, add the egg yoke, 1/2 the liquor and biscuits and mix well.
  • Mix the rice pudding with the vanilla extract and divide between 4 ramekins.
  • Place a peach half, cut side up, on the top of the rice and spoon the amaretto mixture into the hole where the stone was. Drizzle over the remaining amaretto.
  • Place in the middle of the oven and bake for 8-10 minutes, until the top is lightly golden and bubbling.
  • Sit the ramekin on a small plate with a couple of amaretto biscuits on the side.

4 ½ cups finely chopped, peeled peaches
2 tablespoons lemon juice
3 cups sugar
1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)
⅓ cup amaretto liqueur, or more to taste

Steps:

  • Inspect 5 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Mix peaches with lemon juice in a large pot immediately after chopping to prevent peaches from turning brown. Place pot over medium heat.
  • Mix 1/4 cup of the sugar with pectin and add it to the pot with the peaches. Stir well. Slowly bring to a full rolling boil that does not stop bubbling when stirred. Add the remaining sugar and stir well, scraping the bottom of the pot, to fully dissolve the sugar. Cook for 1 minute, stirring constantly.
  • Remove from heat and stir in amaretto liqueur.

  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

2 tablespoons fresh lemon juice

1/4 cup brown sugar crystals (optional)
1/2 cup butter, melted

  • Preheat oven to 350°F.
  • Arrange the peach slices in an 8x8-inch pan or a gratin dish. (NOTE: If you are using frozen peaches, you don't need to defrost them first, but you do need to separate them.) Sprinkle with lemon zest, lemon juice, and Amaretto, if desired.
