5 pounds tomatoes (about 15 medium)
3 medium peaches (about 1-1/2 pounds)
3 large sweet onions, chopped (about 6 cups)
3 medium pears, peeled and chopped (about 3 cups)
2 medium green peppers, chopped (about 1-1/2 cups)
2 celery ribs, chopped
2 jalapeno peppers, seeded and cut into matchsticks
3 cups sugar
2 cups white vinegar
3 teaspoons salt
1 teaspoon mixed pickling spices

Steps:

  • Fill a Dutch oven two-thirds with water; bring to a boil. Cut a shallow "X" on the bottom of each tomato and peach. Using tongs, place tomatoes and peaches, a few at a time, in boiling water for 30-60 seconds or just until skin at the "X" begins to loosen. Remove tomatoes and peaches; immediately drop into ice water. Pull off skins with tip of a knife; discard skins., Coarsely chop tomatoes and peaches; place in a stockpot. Add onions, pears, green peppers, celery, jalapenos, sugar, vinegar and salt. Place pickling spices on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. Add to stockpot. Bring to a boil. Reduce heat; simmer, uncovered, 2 to 2-1/2 hours or until thickened, stirring occasionally. Discard spice bag., Carefully ladle hot mixture into five hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 20 minutes. Remove jars and cool.

Chorizo and Sweet Potato Dumplings with Peach Thai Chili Sauce image

This is the first recipe I made up all on my own with inspiration from a sweet potato dumpling appetizer I had at a nearby restaurant.

2 sweet potatoes, peeled
1 pound chorizo sausage
½ cup grated Cheddar cheese
2 tablespoons chopped fresh cilantro
1 (16 ounce) package wonton wrappers
1 cup peach jam
1 cup sweet Thai chili sauce
2 tablespoons chopped fresh cilantro
2 teaspoons vegetable oil, or as needed

Steps:

  • Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir chorizo in the hot skillet until browned and crumbly, 5 to 7 minutes. Let cool.
  • Drain sweet potatoes, mash, and let cool until safe to handle, 10 to 15 minutes.
  • Combine mashed sweet potatoes, chorizo, Cheddar cheese, and cilantro to make the filling. Set up a prep area for dumplings, including a tray to cool them on and a bowl of water to fasten them.
  • Place 2 teaspoons of filling onto a wonton wrapper, wet the outside edge, and seal. Place dumpling on the tray. Repeat with remaining filling and wonton wrappers. Refrigerate dumplings for 30 minutes before sealing in a zip-top bag to freeze.
  • Combine peach jam, Thai chili sauce, and cilantro to make the dipping sauce.
  • To cook the dumplings from frozen, first heat oil in a pan over medium- to medium-high heat. Add dumplings and a little water; pan-fry until heated through, 10 to 12 minutes.

Oh so good. This is a condiment, used the same as ketchup or picallili. Wonderful with pork and chicken. I use it as an ingredient in my cooking. I like to mix it with a few cans of different beans for a quick, easy Calico Beans. I also pour it over meat loaf, and love it on my burgers. Don't use a food mill on this one, you want it chunky.

3 lbs tomatoes, peeled and chopped, about 6 cups
2 cups onions, small dice
6 cups ripe peaches, peeled and chopped in half inch pieces
1 cup celery, small dice
2 sweet green peppers, small dice
1 hot red pepper, deseeded if you want less heat, and minced
1 1/2 cups cider vinegar
2 tablespoons pickling spices
2 teaspoons pickling salt
2 cups sugar

Steps:

  • Combine tomatoes, onions, peaches, celery, peppers, and vinegar in very large, heavy pot.
  • Place pickling spice cheesecloth and tie up. Add, along with salt, to pot.
  • Bring to a boil over high heat.
  • Reduce heat and boil gently, uncovered, for 1 to 1 1/2 hours, or until thick, stirring ocassionally.
  • Stir in sugar.
  • Return to a boil, and boil gently for 30 minutes, stirring ocassionally.
  • Remove spice bag.
  • ladle into sterilized jars, leaving 1/2 head space.
  • Process 15 minutes for pints and half pints.
