Crunchy Oatmeal Topping Peach Cobbler Recipe 6 cups fresh or frozen peach slices, peeled and pitted 1/2 cup brown sugar, packed 1/4 cup unbleached (organic) flour 1 Tablespoon lemon juice 1 cup unbleached flour 3/4 cup brown sugar 3/4 cup rolled (organic) oatmeal 1 teaspoon (organic) ground cinnamon 4 ounces (organic) (1 stick) butter, cold, cut in 8 pieces How To Make Peach Cobbler Preheat oven to 350 degrees F. Butter a 9" X 9" glass baking pan or 2 quart stoneware baking dish. Set aside. In a large bowl, toss peeled and pitted ripe peach slices with 1/2 cup brown sugar, 1/4 flour and lemon juice and arrange in prepared baking dish. Set aside. 2 cups whole wheat pastry flour, see note
3/4 cup sugar
1/2 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon baking soda
3/4-1 teaspoon cinnamon
1/4-1/2 teaspoon nutmeg
1/4-1/2 teaspoon ground ginger
1 cup oatmeal, old fashioned or 1 cup quick oats, not instant
2 eggs
1 cup milk
1/4 cup oil

Steps:

  • Preheat oven to 350°F.
  • Mix together dry ingredients, stir in oats and peaches.
  • Mix together eggs, oil and milk, stir into flour and mix gently just until flour is incorporated; don't over mix lumpy is ok.
  • Pour into greased muffin cups - I dislike muffin papers - don't grease if you use them.
  • Bake 15- 18 minutes until done and muffin springs bake when lightly touched.
  • Note: Whole wheat pastry flour is easily found in most health food stores and some grocers, King Arthur White Wheat Flour is also good. Both of these give your muffins a lighter texture while still providing good nutrition.
  • If using blueberries use about 1 1/2 cups.

1 tablespoon cornstarch
1/4 teaspoon ground cinnamon
4 cups fresh peaches, peeled, pitted and sliced (I normally use 6 peaches, have also made durring using apples during the fall)
1 teaspoon lemon juice
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsalted butter, softened
1/4 cup sugar
1/4 cup dark brown sugar, firmly packed
1 small egg
1/2 teaspoon vanilla
3/4 cup oats (not instant)
vanilla ice cream

Steps:

  • Preheat oven to 350 degrees F.
  • To Make Peach Filling: In a large saucepan combine 1/2 cup sugar, cornstarch, and cinnamon. Stir in peaches and lemon juice, tossing until peaches are evenly coated.
  • Cook filling over medium heat, stirring constantly until mixture thickens and boils. Boil 1 minute.
  • Pour mixture into an ungreased 2 quart casserole dish. Keep mixture hot in oven while you make cookie topping.
  • Whisk flour, baking soda, baking powder and salt; set aside.
  • Combine butter, sugar, brown sugar, egg and vanilla with a hand mixer on low.
  • To cream, increase speed to high and beat until fluffy and the color lightens.
  • Stir the flour mixture into the creamed mixture until no flour is visible, stir in oats just till incorporated. **Over mixing develops the gluten, making the cookie topping tough.**.
  • Remove peach filling from oven and drop cookie dough onto peaches in 6 equal-size spoonful's.
  • Return cobbler to oven and bake 30 to 40 minutes or until cookie topping is golden brown.

1/4 cup old fashioned oats or 1/4 cup quick oats
1/3 cup water
1/4 cup sliced peaches in juice, canned (this works out to about 5 slices of peach and about 1/8 cup of juice)
1/8 teaspoon cinnamon
1/8 teaspoon butterscotch extract or 1/8 teaspoon vanilla extract
1/2 teaspoon sugar (optional) or 1/2 teaspoon honey (optional)

Steps:

  • Cut up peach slices into small pieces.
  • In a bowl add oats, water, and peaches with juice.
  • Microwave in 500watt microwave for 2 minutes, stir, microwave for another 2 minutes, stir, then microwave in 1 minute intervals until cooked. In a 1200watt microwave, microwave for 30 seconds, stir, microwave for another 30 seconds, stir, and then continue microwaving in 30 second intervals until cooked.
  • Once cooked, add cinnamon, butterscotch extract, and sweetener.
  • NOTE: This serving seems small since it is only 1/4 cup of oats, but with the addition of peaches, it is quite filling, especially when served with a glass of milk; Feel free however, to increase one serving size to double this amount for a very hearty breakfast.

5 tablespoons unsalted butter, melted
Filling
2/3 cup peach or apricot nectar
5 tablespoons sugar
5 teaspoons cornstarch
2 2/3 cups coarsely chopped peeled peaches
1 1/4 teaspoons fresh lemon juice
1 1/4 cups large blackberries

Steps:

  • For crust:
  • Preheat oven to 375°F. Spray 10-inch-diameter fluted tart pan with removable bottom with nonstick spray. Mix cookie crumbs and melted butter in medium bowl until moist clumps form. Press dough evenly over bottom and up sides of prepared pan. Bake until dry, about 10 minutes. Cool crust completely. (Can be made 1 day ahead. Cover tightly with foil. Let stand at room temperature.)
  • For filling:
  • Whisk nectar, sugar, and cornstarch in heavy medium saucepan until smooth. Add half of peaches and lemon juice. Using potato masher, mash to coarse puree. Simmer over medium heat until mixture is thick, stirring constantly, about 5 minutes. Cool completely. Fold in remaining peaches. Spread filling evenly in crust. Arrange blackberries around top edge of tart. Refrigerate until cold, at least 4 hours and up to 6 hours. Bring to room temperature before serving.

1 can (16 oz.) of peaches
1 t. baking soda
10 T. butter, softened
1 cup sugar
2 eggs
1/2 t. vanilla extract
1 1/4 cups flour
1/4 t. salt

  • Heat the oven to 350 degrees. Purée the peaches in a blender or food processor. In a small bowl, stir the baking soda into the puréed peaches (this will cause them to foam). Set aside. In a large bowl, cream the butter with the sugar. When the mixture is smooth, add the eggs, one at a time, and then the vanilla extract. In a medium bowl, sift together the flour and salt. Stir in the rollled oats. Alternately add the flour mixture and the peach purée to the creamed butter and egg mixture. Stir until the ingredients are blended. Fill greased muffin tins. Bake for 20 to 25 minutes or until a tester inserted into a muffin comes out clean.

  • 1. Preheat oven to 450 F.
