12 fresh peaches, pitted and chopped
4 ½ cups white sugar
1 (2 ounce) package dry pectin

Steps:

  • Crush 1 cup chopped peaches in the bottom of a large saucepan. Add remaining peaches, and set pan over medium-low heat. Bring to a low boil, and cook for about 20 minutes or until peaches become liquid (my family likes a few bits of peach left) .
  • Pour peaches into a bowl, and then measure 6 cups back into the pan. Add sugar, and bring to a boil over medium heat. Gradually stir in dry pectin, and boil for 1 minute.
  • Remove from heat after 1 minute, and transfer to sterilized jars. Process in hot water bath canner for 10 minutes. Let cool, and place on shelf.

3 cups peeled and chopped peaches
¾ cup water
1 (1.75 ounce) package fruit pectin (such as Sure-Jell®)
½ cup sucralose sugar substitute (such as Splenda®)

Steps:

  • Fill a canner pot half-full with water and bring to a simmer. Wash jars and rings in warm soapy water; rinse with warm water. Place lids in a saucepan off the heat; pour boiling water on top. Let stand until ready to use.
  • Measure 3 cups of peaches into a 6- or 8-inch saucepot. Stir in 3/4 cup water. Gradually add pectin, stirring until well blended. Bring mixture to a boil over high heat, stirring constantly. Boil exactly 1 minute, stirring constantly. Remove from heat. Stir in sucralose. Skim foam off the surface of the jam using a metal spoon.
  • Ladle jam immediately into the prepared jars, filling to within 1/8-inch from the tops. Wipe jar rims and threads. Cover with lids and rings; screw bands tightly. Place jars on an elevated rack in the canner. Lower the rack to cover the jars with 1 to 2 inches of water, adding more boiling water if necessary. Cover and bring water to a simmer.
  • Process the jam for 10 minutes. Remove jars and place upright on a towel to cool completely, 2 to 3 hours. Check seals by pressing the middle of lid with your finger; if lid springs back, lid is not sealed and refrigeration is necessary.

2 tablespoons lemon juice

1/4 teaspoon almond extract

  • In a Dutch oven, combine peaches, cherries and lemon juice; stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. This was adapted from Peach Preserves (on this site, thank you Kevin!). I changed some of the amounts and ingredients. Full of flavor, and you leave the peach skin on so it's a cinch to make! There are chunks of fruit, so if you want a smoother texture, add a couple more peaches before cooking and strain with a mesh strainer before adding sugar. As with all preserves, a little time consuming, but worth every minute...

7 ripe unpeeled peaches, pitted and coarsely chopped
3 cups chopped fresh mango
2 ¾ cups white sugar
1 (1.75 ounce) package powdered fruit pectin

Steps:

  • Place 1/2 the peaches in a large saucepan and crush until mostly mashed. Add the remaining peaches and mangos. Bring to a boil over medium-low heat. Cook until mostly liquid, 20 to 30 minutes.
  • Pour peach-mango mixture into a bowl and measure 5 1/4 cups back into the pan. For a thicker mixture, use only 5 cups. Add sugar to the pan and bring to a boil over medium heat. Gradually stir in pectin and bring back to a boil. Boil for 1 minute; immediately remove from heat.
  • Pour preserves into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large canning pot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 5 minutes.

2/3 cup packed light brown sugar
1 teaspoon ground cinnamon
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more, for the pan
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup sour cream
2/3 cup peach preserves
3/4 cup confectioners' sugar
2 tablespoons fresh lemon juice, plus 1 teaspoon finely grated lemon zest

Steps:

  • For the crumb topping: Put the flour, brown sugar, cinnamon and salt in a small bowl and stir to combine. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • For the cake: Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the peach preserves on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.

  • For the glaze: When the cake is cool, whisk together the confectioners' sugar and lemon juice and zest in a medium bowl until smooth. Drizzle the glaze over the cake and let set.

2 pounds peaches, peeled and chopped
4 teaspoons grated orange zest
1/3 cup orange juice

  • Place raisins in a small bowl. Cover with boiling water; let stand 5 minutes. Place raisins with liquid in a large saucepan. Add peaches and orange zest. Bring to a boil. or 2 small boxes if large isn't available

  • 1. Prepare your jars...wash figs and cut off stems. Mash with potato masher or put in food processor is what I did.
  • 2. Put figs in cooking pot,and add 3 cups of sugar and 1 box of large jello of your choice (strawberry). Stir and cook on medium heat until boiling,constantly stirring.A foam will form but will dissipate.

ice water
5 cups sugar
2/3 cup strained fresh lemon juice (to taste)

Steps:

  • Directions:.
  • Cut an X in the rounded end of each peach. Bring a saucepan full of water to a boil over high heat. Have ready a bowl of ice water. Add peaches a few at a time to the boiling water and blanch 30 seconds, then transfer to the ice water to stop the cooking. When cool, lift out and peel. The skin should peel back easily from the X.
  • Cut peaches into wedges about 1/2 inch thick, then cut each wedge in half crosswise. Transfer to a large bowl, add sugar and lemon juice and stir well. Let stand several hours or overnight, stirring two or three times, until sugar dissolves and mixture no longer tastes grainy.
  • Transfer to a large pot, bring to a simmer over moderately high heat and simmer, skimming any white foam that collects on the surface, until peaches are tender and syrup thickens slightly, 25 to 30 minutes. Transfer to a large bowl, cover and let rest overnight to "plump" the fruit again.
  • Drain the fruit in a sieve set over a bowl. Taste the syrup and add more lemon juice if it seems too sweet. Return the syrup to a pot and cook over moderately high heat until it reaches 220F 105C). Or test for jamlike consistency by spooning a little onto a chilled saucer, then returning the saucer to the freezer for a couple of minutes to cool the syrup quickly. It should firm to a soft jelly consistency.
  • Return the peaches and any collected juices to the pot and cook a couple of minutes more, until mixture returns to 220 F (105 C). It will seem thin.
  • Remove from heat and let stand 5 minutes, then spoon into clean, hot jars to within 1/2 inch from the top. Wipe rim clean with a towel dipped in hot water. Place lids and rings on jars and seal tightly.
  • Cool and refrigerate for up to 3 months. Or, for longer storage, place just-filled jars in boiling water to cover by 1 inch and boil 15 minutes for half-pint jars, 20 minutes for pint jars.
  • Transfer with tongs to a rack to cool; lids should form a seal. Sealed jars may be stored in a pantry for up to a year.

6 cups coarsely-chopped peeled peaches (abt 4 lbs)
2 cups light brown sugar (packed)
6 tablespoons strained fresh lemon juice
3/4 cup dark rum, preferably jamaican
2 cups granulated sugar

Steps:

  • In a large bowl, combine peaches with the brown sugar, lemon juice and about half of the rum, stirring to mix.
  • Cover and let stand at room temperature six hours or overnight.
  • Wash jars and lids in hot, soapy water.
  • Sterilize jars for 10 minutes in a boiling-water bath, then leave in hot water until ready to fill.
  • Prepare lids according to manufacturer's directions.
  • Pour the fruit mixture into a large saucepan or Dutch oven.
  • Bring to a boil over medium-high heat.
  • Cover the pan, reduce heat and cook the mixture until the peach chunks begin to look translucent, 15 to 20 minutes; stir occasionally to prevent sticking.
  • If the jam becomes too thick and threatens to scorch before the fruit is done, add 2 to 3 tablespoons of water.
  • Add the granulated sugar, increase heat to medium-high and cook rapidly, stirring almost constantly, until a spoonful placed on a chilled saucer and refrigerated for a few minutes wrinkles instead of runs when the saucer is tilted.
  • (Take jam off the heat while doing this. If using a candy thermometer, this should happen at about 220 degrees.)
  • Add remaining rum and stir the jam (it will boil up when you add the rum) for 2 minutes over the heat.
  • Ladle boiling-hot jam into hot, prepared jars, leaving 1/4-inch headspace.
  • Top with lids and process for 15 minutes in a boiling-water bath.
  • Cool jars completely on a dish towel before labeling and storing.

8 x 3L baskets ripe peaches.
12 cups sugar
12 cups water
16 x 1L Mason jars

Steps:

  • 1. Wash 16 jars and put them upside down on a cookie sheet in a 250 F for half an hour to sterilize them. 2. Put caps in a small pot of water and keep hot (not boiling) until ready to use. 3. Steam about 8 - 10 peaches (you don't want to crowd them on top of each other) at a time for 7 minutes, or until the skin slips easily from the fruit. 4. Transfer them to very cold water to stop the cooking process. Peel and slice into a bowl. 5. While you are doing this, get your syrup ready in your biggest pot and let it boil for 5 minutes, or until it is clear and the sugar is dissolved. 6. After all the peaches are sliced, transfer as many of them as will fit into the syrup pot. You will have to do several batches. Bring them to a boil. 7. Take four jars at a time out of the oven and, using a large glass measuring cup, fill them about ¾ of the way with peaches. Stick a knife down the sides of each jar to dislodge all the bubbles. Fill with syrup to ¼" from the top. 8. Wipe the tops of the jar with a clean, wet cloth. 9. Put caps and screw tops on, finger tightening only. Transfer the jars to a draft free area, spacing them about an inch or two apart and cover with a towel. Leave to cool and seal well. Do not move for a week. If any jars don't seal, empty them into a pot, bring to a boil and repeat steps 7-9.

10 peaches
7 ½ cups white sugar
1 ½ teaspoons ground cinnamon
1 ½ teaspoons ground cloves
6 half pint canning jars with lids and rings

Steps:

  • Bring a large pot of water to a boil; add peaches. Cook until peach skin begins to split, 1 to 2 minutes. Drain and allow to cool slightly. Peel, pit, and quarter peaches and transfer to a large pot. Mash peaches with a potato masher and stir in sugar, cinnamon, and cloves.

Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and cool. Once cool, press the top of each lid, ensuring that the seal is tight (lid does not move up or down at all).
