1 teaspoon olive oil
1 teaspoon balsamic vinegar
1 tablespoon brown sugar
1 cup diced fresh peaches
1 cup diced tomato
½ cup sliced, seedless grapes
½ cup diced red onion
1 tablespoon lemon juice
1 tablespoon honey

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Rub chicken breast with olive oil and vinegar, then rub brown sugar onto the chicken until you've got a nice glaze coat.

Tips:

  • Select ripe peaches: Choose peaches that are slightly soft to the touch and have a sweet aroma. Avoid peaches that are too firm or have bruises or blemishes.
  • Use fresh cilantro: Fresh cilantro adds a bright, citrusy flavor to the salsa. If you don't have fresh cilantro, you can substitute dried cilantro, but use only half the amount.
  • Adjust the spiciness: The amount of jalapeño pepper you use will determine the spiciness of the salsa. If you like a mild salsa, remove the seeds from the jalapeño before chopping it. For a spicier salsa, leave the seeds in.
  • Chill the salsa before serving: Chilling the salsa allows the flavors to meld and develop. Serve the salsa chilled or at room temperature.
  • Serve with your favorite Mexican dishes: Peach salsa is a delicious accompaniment to tacos, burritos, quesadillas, and nachos. It can also be served as a dip with tortilla chips or vegetable crudités.

Conclusion:

Peach salsa is a refreshing and flavorful salsa that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. Whether you like it mild or spicy, chunky or smooth, peach salsa is a delicious way to add a touch of sweetness and brightness to your favorite Mexican dishes.
