CURRIED CHICKEN RICE SALAD

Curried Chicken Rice Salad image

About 30 years ago, I got this recipe from a pamphlet at a Visitor's Center just over the Mississippi River from Mississippi into Arkansas. It has been a summer mainstay ever since. The time required assumes you already have cooled cooked rice. Also, I go heavy on the pineapple and use a whole can rather than 1 cup.

Provided by BarbryT

Categories     One Dish Meal

Time 2h10m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 cup raw rice, cooked and cooled
2 cups diced cooked chicken
1 cup diced canned pineapple
1 cup diced celery
1/2 cup diced green pepper
1 cup mayonnaise
1/2 cup chopped peach preserves
1 teaspoon curry powder
salt and pepper
1 cup grated cheddar cheese (optional)

Steps:

  • Combine cool rice (make sure it is really cool, otherwise you will end up with Curried Chicken Rice Mush!), chicken, pineapple, celery and green pepper in biggish bowl.
  • Combine peach preserves, mayonnaise and curry powder. Stir into the chicken mixture. Season to taste with salt and pepper.
  • Chill for at least 2-3 hours. Serve topped with grated cheese, or not -- .

CURRIED RICE & EGG SALAD

Curried rice & egg salad image

Enjoy this lightly spiced rice and egg salad as a side dish at a summer barbecue or picnic. Top with toasted almonds, grated carrots and sliced cucumbers

Provided by Cassie Best

Categories     Side dish

Time 37m

Number Of Ingredients 12

1 tbsp olive or rapeseed oil
1 onion , chopped
2 tbsp mild curry paste (we used korma paste)
1 tsp ground turmeric
300g basmati rice
50g raisins
1 chicken or vegetable stock cube
3 eggs
small bunch of coriander , leaves picked
30g flaked almonds , toasted
2 carrots , grated or finely shredded
½ cucumber , sliced

Steps:

  • Heat the oil in a large pan and cook the onion for 8-10 mins until soft and just turning golden. Boil the kettle. Stir the curry paste, ground turmeric, rice and raisins into the onions. Crumble over the stock cube and pour over enough boiled water from the kettle to cover the rice by ½cm (about 1 litre). Season with some salt. Bring to a gentle simmer, then cover the pan, reduce the heat to its lowest setting and cook for 2 mins more. Without taking off the lid, remove from the heat and leave to steam for 15 mins. This will give you perfect, fluffy rice.
  • Meanwhile, bring another pan of water to the boil and cook the eggs for 7 mins. Plunge into a bowl of cold water to stop them cooking and once cool, drain and halve.
  • Tip the rice into a container and chill for at least 1 hr, or up to two days. When you're ready to serve, scatter over the coriander and almonds, and top with the grated carrot, cucumber slices and eggs.

Tips:

  • Prep your ingredients: Before you start cooking, wash and chop your fruits, vegetables, and herbs. This will save you time and make the cooking process smoother.
  • Cook your rice ahead of time: If you can, cook your rice the day before or at least a few hours before you plan to make the salad. This will give the rice time to cool and firm up, making it easier to handle.
  • Use fresh, ripe peaches: The fresher and riper the peaches, the better your salad will taste. Look for peaches that are fragrant and have a slight give when you press them gently.
  • Don't overcook the rice: Overcooked rice will be mushy and ruin the texture of your salad. Cook the rice according to the package directions, and then drain and rinse it with cold water to stop the cooking process.
  • Use a variety of textures: This salad has a nice mix of textures, from the tender rice and peaches to the crunchy celery and walnuts. You can add other crunchy ingredients, such as chopped almonds or sunflower seeds, if you like.
  • Make it your own: This salad is very versatile, so feel free to add or subtract ingredients to suit your taste. For example, you could add some chopped cooked chicken or shrimp, or swap out the celery for another crunchy vegetable, such as shredded carrots.

Conclusion:

This peachy curried rice salad is a delicious and refreshing side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste. With its sweet and savory flavors, this salad is sure to be a hit at your next potluck or picnic.
