Categories     Cookies

Time 3h10m

Number Of Ingredients 9

1 1/2 c sugar
3/4 c butter
1/4 c water
1 tsp vanilla
1/4 tsp coconut flavoring
2 c flour
1/8 tsp soda
1 tsp salt
1 c crushed peanut brittle

Steps:

  • 1. Cream the sugar and butter ; Add the water , vanilla and coconut flavoring.
  • 2. Sift flour , salt and soda together.
  • 3. Add flour mixture and crushed peanut brittle to the creamed mixture. Stir until just mixed. (DO NOT OVER BEAT.)
  • 4. CHILL for several hours.
  • 5. Make dough into very small balls and place about 2" apart on a lightly greased and floured cookie sheet. (I use the baking spray that has the flour in it ..works great !)
  • 6. Bake @ 350 deg. for about 10 minutes or until lightly brown. Cool on sheet for several minutes ; then remove to a cooling rack.

Tips:

  • Use fresh peanuts: Fresh peanuts have a better flavor and will make your cookies more delicious.
  • Roast the peanuts before using them: Roasting the peanuts will bring out their flavor and make them more crunchy.
  • Use a candy thermometer to make the peanut brittle: A candy thermometer will help you ensure that the peanut brittle reaches the correct temperature, so it will be the right consistency.
  • Be careful not to overcook the peanut brittle: If you overcook the peanut brittle, it will become too hard and brittle.
  • Let the peanut brittle cool completely before breaking it into pieces: This will help prevent it from crumbling.
  • Store the peanut brittle cookies in an airtight container at room temperature: This will help keep them fresh for up to 2 weeks.

Conclusion:

Peanut brittle cookies are a delicious and easy-to-make treat that is perfect for any occasion. With a few simple tips, you can make sure that your peanut brittle cookies turn out perfectly every time.
