1 ¾ cups all-purpose flour
1 ¼ cups packed light brown sugar
¾ cup peanut butter
½ cup butter, softened
3 tablespoons milk
1 egg
1 tablespoon vanilla extract
¾ teaspoon salt
¾ teaspoon baking soda
1 (6 ounce) package chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray the bottom and sides of a 9x13-inch baking dish with cooking spray.
  • Mix flour, brown sugar, peanut butter, butter, milk, egg, vanilla extract, salt, and baking soda together in a bowl. Fold chocolate chips into the batter. Pour batter into the prepared baking dish.

1 cup butter or margarine, melted
2 cups graham cracker crumbs
2 cups confectioners' sugar
1 cup peanut butter
1 ½ cups semisweet chocolate chips
4 tablespoons peanut butter

Steps:

  • In a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9x13 inch pan.
  • In a metal bowl over simmering water, or in a microwave-safe bowl in the microwave, melt the chocolate chips with the 4 tablespoons peanut butter, stirring occasionally until smooth. Spread over the prepared crust. Refrigerate for at least one hour before cutting into squares.

This is a recipe that I sort of made up using healthy ingredients that I like and want my children to eat. I warn you, they are addicting, especially if you LOVE peanut butter. I have tried other protien bar recipes but like the crunchiness that these bars afford. Plus with the powdered milk, you have calcium, too! Do try to use the brand names that I mention, they are healthy, high in protien, vitamins, and have no trans fats. ENJOY.

1 1/2 cups of smucker's natural creamy peanut butter
1/2 cup of clover honey (any old generic honey will do)
1 cup instant nonfat dry milk powder (I use generic)
1/2 cup of alpen original organic muesli
1/2 cup of ocean spray craisins
1 pinch salt (omit the salt if you use something like...skippy peanut butter or Jiff)
1/4-1/2 cup chocolate chips, melted in microwave (but I feel necessary - I LOVE CHOCOLATE) (optional)

Steps:

  • I bought all my ingredients except the Alpen at Wal----.
  • Get out the mixer right now because there is no way that you can mix these ingredients well enough by hand.
  • Put all ingredients in the bowl, mixing slowly at first until just about blended.
  • Using a paddle or spoon, carefully fold melted chocolate chips into mix and mix and mix until well blended.
  • Dump contents unto wax paper, topping with another piece of wax paper and press into about a 7" square.
  • Slice into whatever size bar you like (I aim for around 21) remembering that peanut butter is extremely fattening.
  • Refridgerate AFTER SLICING.

1 1/2 cups sugar
1 teaspoon pure vanilla extract
2 extra-large eggs, at room temperature
2 cups (18 ounces) creamy peanut butter (recommended: Skippy)
3 cups all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons kosher salt
1 1/2 cups (18 ounces) raspberry jam or other jam
2/3 cups salted peanuts, coarsely chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a 9 by 13 by 2-inch cake pan. Line it with parchment paper, then grease and flour the pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light yellow, about 2 minutes. With the mixer on low speed, add the vanilla, eggs, and peanut butter and mix until all ingredients are combined.
  • In a small bowl, sift together the flour, baking powder, and salt. With the mixer on low speed, slowly add the flour mixture to the peanut butter mixture. Mix just until combined.
  • Spread 2/3 of the dough into the prepared cake pan and spread over the bottom with a knife or offset spatula. Spread the jam evenly over the dough. Drop small globs of the remaining dough evenly over the jam. Don't worry if all the jam isn't covered; it will spread in the oven. Sprinkle with chopped peanuts and bake for 45 minutes, until golden brown. Cool and cut into squares.

Nonstick cooking spray
5 tablespoons unsalted butter
1 medium tart apple, such as Granny Smith or Gala, cored and cut into 1/4-inch cubes (no need to peel)
1/3 cup plus 1 tablespoon granulated sugar
1 1/2 cups rolled oats
1/4 cup all-purpose flour
3/4 teaspoon fine salt
3/4 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/3 cup lightly packed light brown sugar
1 tablespoon pure vanilla extract
1/2 cup your favorite peanut butter
1 large egg, at room temperature
1 cup dried baked apple chips, broken into small pieces
1/4 cup white chocolate chips or semisweet chocolate chips
1/3 cup dried baked apple chips, broken into small pieces

Steps:

  • Make the bars: Preheat your oven to 350 degrees F with a rack in the center. Spray an 8-inch square baking pan with nonstick spray, line the bottom with parchment paper, then spray the parchment.
  • Melt the butter in a medium skillet and then pour into a medium heatproof bowl, reserving about 1 tablespoon of the butter in the skillet. Add the apples and 1 tablespoon of the granulated sugar to the skillet, toss and cook over medium heat until the apples are softened and slightly shrunken and most of the juice has evaporated, 3 to 5 minutes.
  • While the apples cook, whisk together the oats, flour, salt, cinnamon, and baking soda in a medium bowl and set aside.
  • In the medium heatproof bowl, stir the brown sugar, remaining 1/3 cup granulated sugar, peanut butter and vanilla into the melted butter. Add the egg and mix well to combine. Stir in the dry ingredients, mixing well, and then stir in the cooked apples and apple chips. The dough will be stiff.
  • Spread the dough into the prepared baking pan and smooth the top. Bake for 40 to 45 minutes, until evenly deep golden brown and the center feels firm to the touch. Place the pan on a wire rack and cool completely.
  • Finish the bars: Remove the cooled bar from the pan. Melt the white chocolate chips in the microwave in a small microwaveable bowl in 8 second increments, stirring well after each until melted, about 30 seconds. Transfer to a sandwich bag, snip off a small opening at the tip and drizzle the white chocolate over the surface of the baked bar. Sprinkle with the apple chip pieces. Cut in half and then cut each half into 6 bars. Store covered at room temperature for up to 4 days.

  • Preheat oven to 350°. Grease two 13x9-in. baking pans., In a large bowl, cream butter, sugar and peanut butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour and baking powder; add to creamed mixture alternately with water and milk, beating well after each addition., Transfer to prepared baking pans. Bake 20-25 minutes or until a toothpick inserted in center comes out clean. Meanwhile, for frosting, in a large bowl, beat peanut butter and butter until blended. Beat in confectioners' sugar alternately with enough milk to reach spreading consistency., Remove cakes from oven; place on wire racks. Spread frosting over warm cakes; sprinkle with peanuts. 4 ounces/115 grams semisweet chocolate (preferably bar chocolate), roughly chopped

  • Working quickly, transfer the mixture to the prepared pan, using a wet spoon or spatula to spread and pat into an even layer, again being careful to avoid crushing or packing the cereal.
  • Place the chocolate in a small heatproof bowl and microwave it in 15-second intervals, stirring between intervals, until melted and smooth. Drizzle the chocolate over the bars in overlapping lines. (If using chocolate chips, scatter the chips onto the surface of the bars while they are still warm and let sit for 5 minutes, allowing the heat of the cornflakes to melt the chocolate before dragging a fork or toothpick through it to create lines.) Sprinkle the bars lightly with flaky sea salt, and set aside at room temperature (in a cool spot, if possible) until completely set, about 2 hours.
  • Cut into bars and serve. Bars will keep, wrapped well at room temperature, for up to 3 days.
