These are good anytime for a chocolate lover. I make these ahead of time, place in the freezer and then do the chocolate coating as I need them.

1 ½ cups packed brown sugar
1 cup peanut butter
¾ cup butter, softened
⅓ cup water
1 egg
1 teaspoon vanilla extract
3 cups rolled oats
1 ½ cups all-purpose flour
½ teaspoon baking soda
1 ½ cups semisweet chocolate chips
4 tablespoons shortening
⅓ cup chopped peanuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat sugar, peanut butter, and butter or margarine till fluffy. Blend in water, egg, and vanilla.
  • Combine oats, flour and baking soda and add to the mixture.
  • Shape into balls 1 inch in size. Place on ungreased cookie sheet, and flatten with a glass dipped in sugar. Bake 8 to 10 minutes. Cool completely.

chocolate (chips and morsels)
butter
flour
peanut butter
egg
vanilla
salt

Steps:

  • 2 squares unsweetened baking chocolate 12 oz of semi-sweet choc. morsels 1/2 t of vanilla 1/4 t of salt 3/4 C of sugar 3/4 C of flour 1 egg 1/2 C of butter 1/2 C of peanut butter Mix sugar and butter and salt in blender until creamy. Add egg and vanilla and blend. Add flour and blend. Melt all chocolate in double boiler and blend into the mix. Fold in peanut butter. Sometimes I let the dough chill a little and this might help keep the cookies from flattening out. Bake in 350 degree oven for 8 1/2 minutes, until firm and beginning to texture on the outside. Don't overbake!

Add a mixture of 1/3 cup flour and the baking powder:beat eggs, extract,and 1 cup brown sugar until thick. Add a mixture of 1/3 cup flour and the baking powder;beat until blended.5.Stir in coconut and chocolate pieces. Spread evenly over partially baked layer in pan.6.Return to oven and bake 30 minutes.7.Cool completely and cut into squares or bars makes about 2 dozen cookies.

1 lb powdered sugar
2 c peanut butter, creamy
3 c rice krispies
CHOCOLATE COATING
12 oz package chocolate chips
4 Tbsp vegetable shortening

Steps:

  • 1. Mix butter, sugar, peanut butter and rice krispies together thoroughly. Roll into small balls and dip in chocolate coating (below). Refrigerate for several hours.
  • 2. Melt chocolate chips and shortening in a double broiler. Coat the small balls in the chocolate mixture. Line the bottom a cookie sheet with wax paper to set them on.
